I love the library! I have borrowed many cookbooks lately, Back in the Day Bakery is one that I would buy. There are so many recipes in it that look and sound amazing. The first recipe I tried was chocolate chip cookies which baked up really thin and flat, but the flavor was one of the best I have tried. I will have to make those again, and hopefully work out the kinks so I can bake a batch worthy of photographing…

Anyway, onto the bread – it bakes up with a dense crumb, but it’s not at all tough or chewy. I didn’t have any mace on hand (who does?), but I replaced it for freshly grated nutmeg instead. Thanks for reading, enjoy!

Brown Sugar Banana Bread – from The Back in the Day Bakery

  • 2 cups AP flour
  • 3/4 cup light brown sugar
  • 3/4 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 tsp ground mace (I used nutmeg instead)
  • 1/2 tsp ground cinnamon
  • 1 1/4 pecans, toasted and chopped (I omitted)
  • 1 1/2 cups well mashed, very ripe bananas (about 3)
  • 1/4 cup sour cream
  • 2 large eggs
  • 6 TBSP unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 2 TBSP dark brown sugar for sprinkling (optional)

Directions –

Position a rack in the lower third of the oven and preheat the oven to 350 degrees. Lightly spray a 9 x 5 inch loaf pan and line the bottom with parchment.

In a large mixing bowl, whisk together the flour, light brown sugar, baking soda, salt, mace, cinnamon and pecans; set aside.

In a medium bowl, mix the mashed bananas, sour cream, eggs, butter and vanilla with a sturdy wooden spoon. Gently fold the banana mixture into the flour mixture until just combined.

Scrape the batter into the prepared loaf pan, spreading it evenly with a spatula. If using, sprinkle the dark brown sugar on top of the loaf. Bake for 45 to 55 minutes, or until the loaf is golden brown and a toothpick inserted in the center of the loaf comes out clean. Cool the bread in the loaf pan for 5 to 10 minutes, then transfer to a wire rack.

Serve warm or at room temperature. Wrapped in parchment, the bread will keep at room temperature for up to 3 days.

Chocolate Cream Pie with Oreo Crust

Quick Post: I know I’m late to the game here, but this was our first year to “celebrate” Pi Day. This chocolate cream pie was amazing, and the flavor was even better with age. Chocolate Cream Pie – adapted from King Arthur Flour

Crust – *recipe link*

  • 24 Oreos
  • 4 TBSP butter, melted

Filling –

  • 2 tablespoons unsalted butter
  • 1 1/3 cups semisweet chocolate, chopped (about 6 ounces)
  • 1 teaspoon vanilla extract
  • 2/3 cup granulated sugar
  • 3 tablespoons arrowroot powder or cornstarch
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon espresso powder, optional; for richer chocolate flavor
  • 1/8 teaspoon salt
  • 3 large egg yolks
  • 1 cup heavy cream, divided
  • 2 cups milk

Stabilized Whipped Cream – *recipe link*

  • 1 cup heavy cream
  • 1/4 cup confectioners’ sugar
  • 1/4 tsp powdered gelatin
  • 2 TBSP water
  • pinch of salt
  • chocolate curls (optional)

Directions –

For the Crust – 

In a medium-sized bowl or a food processor, add the Oreo cookies and blend until the texture of coarse meal or crumbs. Add the melted butter and blend until well combine. Place the ground crumb mixture into a 9- or 10-inch deep-dish pie pan and press onto the bottom and up the sides evenly. Try to make the crust about 1/8 inch (1/3 cm) evenly all around. Refrigerate the crust for at least an hour before you add the filling of your choice.

For the Filling – 

1)Place the chopped chocolate, butter, and vanilla extract in a 2-quart mixing bowl; set aside.

2) In a medium saucepan away from heat, whisk together the sugar, cornstarch, cocoa, espresso powder, and salt. Whisk in 1/4 cup of cold heavy cream until the mixture is smooth, with no lumps. Repeat with another 1/4 cup of the cream. Whisk in the egg yolks.

3) Place the saucepan over medium heat, and gradually whisk in the remaining cream and milk.

4) Bring to a boil, whisking constantly as the mixture thickens; boil for 1 minute.

5) Remove the pan from the heat and pour the mixture over the reserved chocolate and butter.

6) Whisk until the chocolate is melted and the mixture is smooth.

7) Pass the filling through a strainer into a bowl to remove any lumps.

8. Place plastic wrap or buttered parchment paper on the surface to prevent a skin from forming, and chill thoroughly.

9. Pour the chilled pudding into the chilled Oreo crust and top with whipped cream and chocolate curls.

For the topping – In bowl sprinkle gelatin over cold water. Scald 2 tablespoons of whipping cream and pour over gelatin. Stir until dissolved. Refrigerate about 15 minutes. Then whisk until smooth. Mix remaining cream, sugar and salt. Mix in smooth gelatin mixture stopping to scrape bowl twice.

Pancake Mini-Muffins

Planning ahead saves time, right? I love when I find recipes that make life a little easier, especially school mornings! There are far more mornings than I care to admit when I have had to force my eyes to open; and the last thing I want to do is think about breakfast. These are so quick, easy and the kids love them 🙂

The best thing about these is that I don’t have to stand over a hot stove and flip each one! I made some minor changes by replacing all the AP flour with half whole wheat pastry flour, and buttermilk because I had plenty on hand. When ever I use this muffin tin, the baked goods love to stick; so instead of adding the chocolate chips to the batter we added a few to the tops. Once they finished baking/cooling completely, I bagged them and placed them in the freezer. In the morning, we microwave them for about 3 minutes at 50% power so they don’t dry out or become rocket hot. Once they’re all gone, I will make another batch because I’m sure they’ll fight over the last 6… Thanks for reading, enjoy! 🙂

Pancake Mini-Muffins – adapted from The Pioneer Woman

  • 1 1/2 cups AP flour
  • 1 1/2 cups whole wheat pastry flour
  • 1 Tablespoon Baking Powder
  • 3 Tablespoons Sugar
  • 3/4 teaspoons Salt
  • 2 1/2 cups buttermilk
  • 2 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 4 Tablespoons Butter, Melted
  • Chocolate chips, optional
  • coconut oil to prep the tin (or whatever you prefer)

Preparation Instructions

Preheat oven to 400 degrees

Sift together flour, baking powder, sugar, and salt. Set aside.

In a large bowl, combine buttermilk, eggs and vanilla

Combine dry ingredients and wet ingredients, then stir in melted butter. If batter is too thick, stir in a little milk.

Spray a mini-muffin pan generously with coconut oil. Fill cups 2/3 full. If using chocolate chips, drop 2 to 3 onto each cup.

Bake for 8 to 10 minutes, or until golden brown on top. Let sit in the pan for 1 to 2 minutes, then turn them out of the pan. (Use a small knife if any are stubborn.)

Serve warm with warm syrup!

Tres Leches Rice Pudding

Rice pudding is the nostalgic comfort food of my childhood. My dear Gram would often make a big pot of arroz con leche for breakfast, which I happily ate then and will continue to enjoy – even if the pot is all for me. Sadly, (and strangely) my family doesn’t have an appreciation for this kind of treat. Last night, I did get my girl to try two small tastes of this (she’s the picky one), and she said it was pretty good. I will make a believer out of her yet! 😉

Most recipes call for chilling the pudding for a couple of hours in the fridge – forget that! Why wait when this stuff begs to be eaten hot with just a pinch of cinnamon on top? This pudding was luxurious and creamy and not too sweet. Near perfect! Gram’s will always be the standard, but I think she’d approve of this 😉 Thanks for reading, enjoy!

Tres Leches Rice Pudding – adapted from Smitten Kitchen Cookbook

  • 1 cup (180 grams) long- grain white rice
  • 3/4 teaspoon table salt
  • 1 large egg
  • One 12- ounce can (11/2 cups or 355 ml) evaporated milk
  • One 13.5- ounce can (1 cups or 415 ml) unsweetened coconut
  • One 14- ounce can (11/4 cups or 390 grams) sweetened
  • 1 teaspoon vanilla extract
  • Ground cinnamon, to finish

Cook the rice: Put the rice, 2 cups of water, and the salt in a medium saucepan with a tight- fitting lid. Bring to a boil- you should hear the pot going all a flutter under the lid and puffing steam out the seam. Reduce to a low simmer, and let the rice cook for 15 minutes, until the water is absorbed. Remove the rice pot from the heat.

Once the rice is cooked, whisk the egg in a medium bowl, and then whisk in the evaporated milk. Stir the coconut and sweetened condensed milks into the rice, then add the egg mixture. Return the saucepan to heat and cook the mixture over medium- low heat until it looks mostly, or about 90 percent, absorbed (the pudding will thicken a lot as it cools), about 20 to 25 minutes. Stir in the vanilla, then divide the pudding among serving dishes. Chill your puddings for at least an hour if desired – I love mine warm with a sprinkling of cinnamon 🙂

One Big Pizza

As I rolled out this batch of dough, I realized it would not fit on my stone. Rather than split it in two, I pushed it into the perfect sized rectangle for my half sheet pan. I’m glad I did, and this pizza was so stinkin’ good. I used this Italian chicken sausage that I crisped up in a large skillet, while the crust was par-baking in the oven. I used at least four types of Italian cheeses on this and flavored the crust with olive oil and other seasonings. My family loved this pizza and my son requested it for his birthday dinner 🙂 Thanks for reading, enjoy!

One Big Pizza – 

For topping the crust:

  • olive oil
  • garlic powder
  • kosher salt
  • dried oregano

*Optional Equipment – pizza stone and a silicone pastry brush

Directions –

Preheat oven to 475. Place a pizza stone on a rack placed on the lowest level of the oven.

Roll out dough onto parchment lined sheet pan, drizzle with olive oil and bake for 5 minutes.

Top the crust with pizza sauce and bake for another 5 minutes.

Spread about 1/2 the shredded cheese on the top, and bake for another 5-7 minutes.

Using a pastry brush, paint the crust with olive oil, sprinkle with garlic powder and kosher salt, sprinkle with oregano all to taste. Top with browned sausage and the remaining cheese, bake until golden brown and bubbly – about another 7 minutes. Take a peek at the bottom of the crust to make sure it’s golden brown – if not, continue baking until it’s done.

Simple Rice Pilaf

Quick Post: Years ago, before I was a food snob, I bough boxed rice and pasta sides without thinking twice. This is a great substitute for a basic Rice-a-Roni side and it has way more flavor, not to mention ingredients that I can pronounce 😉 Thanks for reading, enjoy!

Simple Rice Pilaf – adapted from Simply Scratch

  • 2 TBSP unsalted butter
  • 1 TBSP olive oil
  • 1 cup Orzo pasta
  • 1 cup long grain white rice
  • 2.5 cups chicken stock
  • salt and pepper to taste

Directions – 

Melt butter in a 2 quart saucepan until hot and bubbly. Add the orzo and toast until it becomes lightly golden. Add the cup of rice, stir. Pour in the chicken stock and bring back to a boil. Reduce heat to low, cover and simmer for 18-20 minutes or until the liquid is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork and serve.

Orange Glazed Chicken Thighs and Coconut Rice

Orange Glazed Chicken Thighs – adapted from The Stay at Home Chef

  • 8 chicken thighs
  • 1 cup orange juice (about 4 oranges)
  • 1 orange, zested
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1/3 cup brown sugar
  • 1 tsp fresh ginger, grated
  • 1/2 tsp red pepper flakes
 Directions –
1. Preheat your oven to 425 degrees. Spray a 9×13 pan with non stick cooking spray. If you want to be fancy, line the bottom of the pan with orange slices (optional).
2. In a small saucepan, combine the orange juice, orange zest, rice vinegar, soy sauce, brown sugar, ginger, and red pepper flakes. Bring to a boil, then reduce heat to medium-low and simmer for about 5 minutes.
3. Place your chicken thighs skin-side up in the prepared baking dish. Pour half of the glaze over the chicken thighs.
4. Cook in the oven for about 30 minutes. Take the remaining glaze and pour it over the chicken.
5. Cook for an additional 15-20 minutes. The skin will get nice and crisp and browned.

Coconut Rice –

  • 1 1/2 cups long grain white rice
  • 1 can of unsweetened coconut milk, plus enough water to make 2 cups
  • 1 cup water
  • salt to taste (optional)

Directions –

In a medium saucepan, add water and coconut milk and rice. Cover and bring to a boil, then add salt – stir to dissolve, reduce heat to a simmer and continue cooking until all the liquid has been absorbed, about 15-18 minutes.

 

Buttermilk Waffles

School  just started up again and breakfast time can be a bit of a hassle, and I love having waffles in my freezer for easy, no-brainer breakfasts. I doubled this batch and it made 14 – 1/2 cup waffles that I “healthified” slightly by using whole wheat pastry flour and some grapeseed oil instead of all butter. These are lightly crispy, fluffy with just a touch of sweetness; and they don’t even need syrup. Once the waffles cool, I pull them apart, stack them, bag them and freeze them. Depending on how much time I have in the mornings, I’ll reheat them in my oven at 35o for 7-10 minutes – or if we’re running late, the microwave works just fine. Thanks for reading, enjoy!

Buttermilk Waffles – slightly adapted from Completely Delicious

  • 1 1/2 cups whole wheat pastry flour
  • 1 1/2 cups AP flour
  • 1/4 cup butter
  • 1/2 cup grapeseed oil
  • 1/2 cup sugar
  • 1/2 cup arrowroot powder or cornstarch
  • 4 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 1/2 cups buttermilk
  • 4 eggs
  • 2 tsp. vanilla extract

Directions –

In a large bowl, combine the flour, sugar, cornstarch, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, eggs, melted butter and vanilla. Add the buttermilk mixture to the dry ingredients and stir until just combined.

Preheat a waffle maker according to manufacturer’s instructions. Grease with non-stick spray if necessary. Pour scant 1 cup batter into the hot waffle maker (1/2 cup for smaller waffle irons). Cook until golden brown, and serve.

Salad with Maple-Dijon Dressing

It’s a new year and I tend to get inspired to eat a little healthier. This is a really simple, light but flavorful salad with lots of textures and flavors. Use whatever you have to make it interesting, because salads can be so bland and boring. I listed goat cheese in the ingredients even though I didn’t have any, but it would have been a nice tangy, creamy addition. Thanks for reading, enjoy!

Maple-Dijon Dressing – adapted from The Six o’clock Scramble

  • 1/4 cup extra virgin olive oil
  • 1/8 cup balsamic vinegar
  • 1 Tbsp. pure maple syrup
  • 1 tsp. Dijon mustard
  • 1/4 tsp. herbes de Provence

Salad –

  • grilled chicken, chopped
  • apple, sliced
  • tomatoes
  • almonds, chopped
  • crumbled goat cheese

Directions –

Place all dressing ingredients into a lidded jar and shake well to combine.  Spoon over your salad greens and toss.

Creamy Chicken and Rice Soup

I had just enough leftover chicken to make this, plus everything else on hand to make this recipe – I love that! This was perfect for a Sunday lunch and we all enjoyed it with our favorite crescent rolls. Thanks for reading, enjoy!

Creamy Chicken + Lemon Rice Soup – adapted from Simply Scratch

  • 1 tablespoon Olive Oil
  • 1 small onion, diced
  • 2 medium peeled carrot, diced small
  • 2 stalks celery, diced small
  • 8 cups chicken stock or broth
  • 3/4 cup white rice
  • 2 tablespoons fresh lemon juice, strained
  • 2 whole eggs, beaten
  • kosher salt and fresh black pepper to taste
  • 1 heaping cup leftover shredded chicken

Directions –

Heat your Dutch oven over medium heat and add one tablespoon of olive oil.

Sauté the diced carrots and celery until they’re just starting to soften. Pour in the low sodium chicken broth and bring to a boil.

Pour in the 3/4 cup of long grain rice. Cover the pot with a tight fitting lid and reduce the heat to medium high. Cook the rice for 20 minutes; stand nearby just in case there’s a boil-over.

In a bowl, beat the two eggs and add in the lemon juice. Once the twenty minutes are up, remove the lid to the soup and gather some of the broth into a ladle. While stirring, slowly pour in the hot broth into the egg mixture. Then pour the warmed egg/broth mixture into the Dutch oven and stir.

Add in the shredded chicken and minced parsley. Taste the soup and check the seasonings, season with salt and pepper to your liking.
