Grilled Steak Tacos with Chimichurri

These are the best steak tacos I have ever eaten and chimichurri is a new surprise fave 🙂 I used this pico de gallo recipe, caramelized onions, and this tortilla recipe. Thanks for reading, enjoy!

Grilled Steak Tacos – adapted from Feasting at Home

Steak and Marinade-

  • 2 lbs Flank Steak ( or pounded skirt steak)
  • 1 sliced sweet onion for grilling (optional)
  • Juice of 1 orange
  • Juice of 2 limes
  • 1/3 C soy sauce
  • 1/3 C olive oil
  • 1/2 tsp sugar
  • 4 smashed, chopped garlic cloves
  • 1/2 C chopped cilantro (stems ok)


Directions:
In a bowl, mix together ingredients for marinade. Place steak in a gallon size Ziploc bag and pour marinade over, sealing and turning several times to coat well. Let sit at room temp for at least 30 minutes, turning occasionally. ( Or marinate for up to 3 hours in fridge, bringing to room temp before grilling.) Grill steak on med high heat to desired doneness. A little char is good. Let rest 10 minutes, (grill the tortillas in the mean time) then thinly slice the meat across the grain.

Cilantro Chimichurri-

  • 1 bunch Cilantro or about 1 cup packed (stems OK)
  • 1 bunch Italian Parsley- about 1 cup packed (thin stems OK)
  • 1/4 C fresh lime juice (1-2 limes)
  • 1/2 C olive oil
  • 1/4 C chopped onion
  • 2 garlic  cloves
  • ground cumin 2 tsp
  • ground coriander 2 tsp
  • salt 3/4 tsp kosher
  • jalapeño -1/2 a pepper

Directions:
In a food processor, place jalapeno, garlic, onion, and pulse several times until chopped. Add cilantro and Italian parsley, pulse again. Add oil, lime juice, cumin, coriander, and salt. Pulse until combined. Set aside in small serving bowl.

Tequila Lime Chicken

Sorry for the radio silence! We recently came back home from our two-week long trip to California. I am really glad to be home again and I’m sure my kitchen missed me as much as I missed it. My husband sustained himself on one meal a day (not home cooked), and these goodies that I made for him before I left! What would he do without me? 😉 Since I’ve been back home, I have tried several new and successful recipes which I will share with you in the next few weeks.

Anyway, on to the recipe! This marinade gives the chicken amazing flavor and it’s a new family favorite. I used chicken thighs and served these tacos with pico de gallo, my fave Mexican rice and refried (in bacon grease!) pinto beans with lots of Monterey Jack cheese. I will make this again and again! Tequila Lime Chicken – adapted from The Pioneer Woman

  • 2 limes
  • 1/2 cup tequila
  • 1/4 cup olive oil (*I used grapeseed*)
  • 1 teaspoon kosher salt
  • 3 cloves garlic
  • 1 jalapeno, seeded and sliced
  • 1/2 bunch chopped fresh cilantro
  • 6-8 boneless, skinless chicken thighs (*If you have a few more pieces, this makes plenty of marinade*)
  • Corn tortillas
  • Monterey jack cheese
  • pico de gallo

Directions –

Slice open the limes and squeeze the juice into a food processor or blender. Add the tequila, olive oil, salt, garlic, jalapenos and cilantro. Blend the mixture until totally combined. Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.

Remove the chicken from the bag and grill it over medium-high heat. Rotate the chicken 45-degrees on both sides to create nice grill marks, and continue grilling until the chicken is cooked through, 4 to 5 minutes per side. Serve with corn tortillas, fresh pico de gallo, beans and rice.

Chile Verde

Quick Post: I love this dish – seriously it’s one of the best things I make. The house smells amazing right now! It’s not something that can be made quickly, but it is so worth the effort it takes. I thought I posted this recipe here already, but I found out that it has been at least two years since I last made it. I found this recipe about three years ago, but I have combined two different recipes to make this just the way I like it. We enjoyed this over rice that  I cooked with chicken stock instead of water, and these tortillas. Thanks for reading, enjoy!

Chili Verde – loosely adapted from Food Network and For the Love of Cooking

Tomatillo Salsa:

  • 1 pound tomatillos, husked
  • 1 white onion, peeled, sliced, quartered or whole
  • 4 garlic cloves
  • 2 jalapeno
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/2 cup chopped cilantro leaves
  • 1/2 lime, juiced

Directions –

Preheat oven to 400 degrees F. On a baking tray, roast tomatillos, onion, garlic and jalapeno for 12 to 15 minutes. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky.
For the Pork:
  • 1 1/2 to 2 lbs of pork loin (or shoulder), trimmed of excess fat and cut into to 2-inch cubes
  • Sea salt and freshly cracked black pepper, to taste
  • Olive oil
  • 2 yellow onions
  • 3 garlic cloves, peeled and finely chopped
  • 1 Tbsp of dried Mexican oregano
  • 2 1/2 cups chicken stock

Directions –

Season the pork cubes generously with sea salt, freshly cracked pepper and oregano, to taste. Heat olive oil in a large Dutch oven over medium high heat then brown pork chunks on all sides. Remove pork from Dutch oven and set aside. I had just a little grease in the pan so I didn’t add olive oil but if you have no grease, add a bit of olive oil. Place the onions in the Dutch oven and cook until tender, about 4-5 minutes. Add the garlic and cook, stirring constantly, for 60 seconds. Add the pork to the onion mixture then pour your chile verde sauce on top. Add enough chicken stock to cover the meat. Taste and re-season with salt, pepper and oregano to taste. Be careful not to add too much because the chile verde will continue to cook down and concentrate a bit. Bring to a boil and reduce to a slight simmer. Cook for 2-3 hours uncovered or until the pork is fork tender.

BOMB Chicken Enchiladas

These were amazing! I was so impressed with this meal and it will go in the rotation. It’s totally worth the extra effort, and even my picky husband enjoyed these. For someone who doesn’t like red sauces or corn tortillas, he ate two large servings, and took leftovers to work the next day without a complaint! I served these with spicy pinto beans (I will share that recipe soon) and fresh pico de gallo. Thanks for reading, enjoy! Chicken Enchiladas with Red Chile Sauce – adapted from Pink Parsley

  • 1 medium onion, chopped fine
  • 2 jalapenos, seeded and chopped fine
  • 1 teaspoon canola oil
  • 3 medim cloves garlic, minced
  • 3 Tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon coriander (*my addition*)
  • 1/2 teaspoon ancho chili powder (*my addition*)
  • 3 teaspoons sugar
  • 1 15-oz can tomato sauce
  • 1 cup water
  • 2 roma tomatoes, seeded and chopped
  • 1 pound boneless, skinless chicken breasts
  • 1 cup extra sharp white cheddar, shredded
  • 1 cup monterey jack cheese, shredded
  • 1/2 cup minced fresh cilantro
  • 12 (6-inch) soft corn tortillas
  • cooking spray
  • salt and ground black pepper

Directions: Preheat oven to 425. Combine the onion, jalapeno, 1/2 teaspoon salt, and oil in a large saucepan. cover and cook over medium-low heat, stirring often, until the onions and peppers have softened, 8-10 minutes. Stir in the garlic, chili powder, cumin, and sugar, and cook until fragrant, less than 30 seconds. Stir in the tomato sauce, water, and chopped tomato. Bring to a simmer, and cook until slightly thickened, 5 minutes. Nestle the chicken into the sauce. Reduce heat to low, cover, and cook until chicken is cooked through (thickest part reaches 160 degrees), about 12-20 minutes. Transfer the chicken to a plate, and set aside to cool. Strain the sauce through a strainer into a medium bowl, pressing the onion mixture to extract as much liquid as possible. Transfer the onions to a large bowl and set aside. Season sauce with additional salt and pepper to taste. Shred the chicken into bite-sized pieces. Add to the onion mixture, and add 1/4 cup of the enchilada sauce, 1 cup cheese, and the cilantro. Toss to combine. Stack the tortillas on a plate and cover with plastic wrap; Microwave on high until warm and pliable, 40-60 seconds. Spread the tortillas on a clean work surface, and spoon 1/3 cup of the chicken mixture evenly down the center of each. Tightly roll each tortilla and lay seam-side down in a greased 9×13 inch baking dish. Lightly spray the tops of the enchiladas with cooking spray. Place in the oven, uncovered, for about 7 minutes, or until the tortillas start to brown slightly (skip this step if you don’t like the crunch). Reduce heat to 400. Remove enchiladas and pour sauce evenly on top. Top with the remaining cheese. Cover dish with foil, and bake an additional 20 minutes, or until heated through. Remove foil and bake another 5 minutes, until cheese browns. Remove from oven and let stand 10 minutes before serving.

Baked BBQ Pork Taquitos

Quick Post: These were so good! I have made the recipe that these taquitos were inspired by, and those are amazing too. We all really enjoyed these, and my husband didn’t even mind/notice that there were some things in these he would normally pass on. The flavor compliment each other really well and all my modifications are listed below. Thanks for reading, enjoy!

Baked BBQ Pork Taquitos – adapted from Pink Parsley

  • 4 oz. cream cheese, softened to room temperature (reduced-fat is fine)
  • 1/3 cup bbq sauce
  • 1/2 tsp paprika
  • 1/2 tsp chile powder
  • 1/2 tsp garlic powder
  • 1 garlic clove, minced
  • 1/2 tsp mustard powder
  • 1/2 tsp brown sugar
  • pinch red pepper flakes
  • kosher salt and pepper to taste
  • 3 scallions, minced
  • 3-4 Tbs minced fresh cilantro
  • 2 1/2 cups shredded or chopped pork
  • 1 cup sharp cheddar cheese
  • 10-15 (6-inch) corn or flour tortillas
  • canola oil for brushing
  • BBQ sauce or ranch dressing for dipping
Directions:
Preheat the oven to 425 degrees and spray a baking sheet with cooking spray. In a large bowl, combine the cream cheese with the bbq sauce, paprika, garlic powder, mustard, brown sugar, chile powder, red pepper flakes, cilantro, scallions, and 1/4 tsp kosher salt.  Fold in the pork and cheese.  Taste and season with additional salt and pepper if necessary. Working 3-4 tortillas at a time, stack them on a microwave-safe plate and cover with a damp paper towel.  Cook 30 seconds, or until tortillas are soft and pliable.Spoon 2-3 tablespoons of filling onto the lower third of each tortilla, and roll tightly.  Place seam side-down on the prepared baking sheet.  Repeat with remaining tortillas and filling.Brush the taquitos lightly with canola oil, sprinkle with salt.  Bake 15-20 minutes, or until the tortillas are crisp and golden-brown.  Serve with bbq sauce and ranch dressing for dipping.

Ginger and Cilantro Baked Tilapia

Quick Post: I was hoping that this would taste better, but I didn’t care for it too much. My husband said it was ok, but I know I wont make this again. It’s missing something – there are too many savory flavors going on here and not enough balance. Maybe it needed some lime to brighten it up, but I didn’t think to try that. I served the fish over this rice instead of the recommended orzo. Thanks for reading!

Ginger and Cilantro Baked Tilapia – adapted from the Kitchn

  • 1 1/2 pounds tilapia fillets
  • Kosher salt and freshly ground pepper
  • 3 garlic cloves, peeled and smashed
  • 1 inch fresh ginger, grated, about 1 tablespoon
  • 1 jalapeño pepper, roughly chopped (optional)
  • 1/3 cup roughly chopped cilantro leaves
  • 1/4 cup white wine
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Scallions, chopped for garnish
  • Extra cilantro, to garnish
Directions:

Heat the oven to 475°F. Pat the fish dry, season lightly with salt and pepper, and lay in a 9×9-inch or 8×8-inch ceramic or glass baking dish.

Put the garlic, grated ginger, chopped jalapeño, and cilantro in a small food processor with the white wine, soy sauce, and sesame oil. Whir until blended. (Alternately, you can finely chop or mash the aromatics in a mortar and pestle, then whisk together with the liquid ingredients.)

Pour the sauce over the fish, rubbing it in a little. Bake for 8 to 10 minutes, or until the fish flakes easily and is cooked through. It will be very moist and even a little gelatinous, still.

Serve immediately over brown rice or orzo, garnished with the additional scallions and cilantro.

Soy-Ginger-Lime Chicken with Cilantro-Lime-Ginger Rice

Quick Post: The title is a mouthful! The combination of these two recipes was a hit at my house and it’s healthy, fresh and easy to make. Thanks for reading, enjoy!
Soy-Ginger-Lime Marinade – adapted from Simply Scratch
  •  2 – 3 cloves of Garlic, smashed and peeled
  • 1 large Shallot, peeled and quartered
  • 1 Lime, juiced
  • 3/4 inch of Ginger, peeled, and roughly chopped
  • 1/4 cup low sodium soy sauce
  • 1/4 cup grapeseed oil
  • 1 tablespoon Honey
  • salt and pepper to taste
Directions:
Combine all ingredients (using a stick blender makes quick work of this). Pour the mixture over the chicken and marinade for at least 4 hours. Preheat grill to medium heat and cook for 6 to 8 minutes per side or until done.
Cilantro, Lime and Ginger Rice –
  • 1 cup uncooked long-grain white rice
  • 1 inch of ginger, peeled and thinly sliced
  • the zest and juice of one lime
  • 1 1/2 cups water
  • kosher salt to taste
  • 4 tablespoons fresh chopped cilantro

Directions:

In a a saucepan combine rice, ginger slices, salt and water. Bring to a boil. Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat. Stir in cilantro and lime zest. Serve warm.

Creamy Cilantro Lime Dressing

Quick Post: I’m always on the lookout for more dressings to spice up my salads. This one is so yummy – creamy, tangy, herbaceous, slightly spicy and a little sweet. This would be a perfect spread for sandwiches or topped onto grilled chicken or shrimp. It does take a little extra time to prepare, but it’s worth the effort and I’ll definitely make this again. Creamy Cilantro Dressing – adapted from Pinch of Yum
  • 3/4 – 1 cup cilantro leaves
  • 1 cloves garlic
  • 3 tablespoons plain  Greek yogurt
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • 2 teaspoons fresh lime juice
Directions: 
1. Place all ingredients in your stick blender carafe and blend. Thin out with more olive oil or lime juice as needed.

Pico de Gallo

I haven’t made this in a long time – which is probably due to the fact that there is no short cut to making this. There is lots of chopping, dicing, and mincing involved; thankfully it’s totally worth the effort. This recipe comes from one of my favorite bloggers – The Pioneer Woman 🙂 She knows her stuff and she is a home cook just like me – no formal training is required when you have a love for food and a desire to try out new techniques. I have come a long way in 8 1/2 years of marriage. In the beginning, I used a lot of boxed meals, frozen and prepackaged stuff – I had to start somewhere, right? Thankfully, my husband wasn’t raised around a lot of fabulous cooks, so he didn’t know what he was missing out on! 😉 I could never go back to that kind of cooking and those fuss free, easy stuff. I get such a feeling of satisfaction and fulfillment out of giving my family the very best.

Anyway, this turned out perfectly and wasn’t too spicy when we added it to these tacos. By itself though, it has quite a kick! Thanks for reading, enjoy!

Pico de Gallo – adapted from The Pioneer Woman

  • 5 whole Plum (roma) Tomatoes
  • œ whole Large (or 1 Small) Onion
  • 3 whole Jalapeno Peppers
  • Cilantro
  • Lime Juice
  • Salt To Taste

Directions –

Chop jalapenos, tomatoes and onions into a very small dice. (Leave seeds in your jalapenos for a hotter pico). Adjust amount of jalapenos to your preferred temperature. Next, chop up a nice-sized bunch of cilantro. Just remove and discard the long leafless stems before chopping. No need to remove the leaves from the stems completely. Place all of these ingredients together in a bowl and give it a good stir.

Squeeze the juice of half of one lime into the bowl. Add salt to taste and stir again.

Tilapia with Cilantro-Lemon Butter

Why did I wait so long to make this again? I tried this out about two years ago, so I knew it that we liked it but I still wanted to try something new with tilapia. Well, I’m glad I didn’t because this was so good! Tilapia was on sale today at Publix, then I thought “well, I haven’t cooked fish in a long time”, then I was on the hunt for recipes. It has a lot of my favorite flavors all combined in this super simple and tasty dish: cumin, lemon, cilantro, butter…those are all winners in my book!;) I recommend doubling the dry seasonings and make sure your butter is at room temperature so it’s easier to mix in your ingredients. Tilapia with Cilantro-Lemon Butter – adapted from Gimme Some Oven

For the fish:

  • 1/2  tsp. salt
  • 1/2  tsp. ground cumin
  • 1/2 tsp. paprika
  • 1/4  tsp. ground red pepper
  • 4  (6-ounce) tilapia fillets (*I bought about 2 lbs)
  • 1 Tbsp. olive oil
Cilantro-Lemon Butter:
  • 3  tablespoons  butter, softened
  • 3  tablespoons  finely chopped fresh cilantro
  • 1  teaspoon  grated lemon rind
  • 1/2  teaspoon  paprika
  • 1/4  teaspoon  salt
  • 1 lemon, quartered
Directions –
To make the butter, simply combine the first five “cilantro-lime butter” ingredients together in a bowl and use a spoon to stir/mash until blended.  Store in refrigerator if not used immediately.

To prepare fish, combine first four “fish ingredients”; sprinkle over both sides of fish and then lightly coat fish with cooking spray. Heat olive oil in a large nonstick skillet over medium-high heat.  Add fish and cook 3 minutes on each side or until fish flakes easily when tested with a fork. Place fish on a serving platter and top with a dollop of cilantro-lemon butter.  Serve with a lemon wedge, to be squeezed on top of the fish
