The easiest way for me to make sure I’m getting more fruits and veggies into my diet is blending lots of them all together. This blend seems popular among the green smoothie believers; and it does taste better than it looks thanks to the banana and all the other fruit. I bought a juicer! I wasn’t sure how this would turn out because I haven’t tried beets since I was a kid…and those were the gross canned kind that you find in salad bars. The finished juice was the most gorgeous magenta color, and I hoped that it would taste as good as it looked! The first taste of anything new is usually off-putting, but as I continued to sip it, it tasted better and better. It’s not my new favorite, but I know I will make it again. The other recipe is a great starter juice, especially for kids. My daughter enjoyed this one, but I didn’t add the ginger because she wouldn’t have appreciated the spiciness of it. This was my first pumpkin spice latte ever, so I can’t compare it well to a coffee shop drink. What I can tell you is that this is like pumpkin pie in a cup! Healthier Pumpkin Spice Latte – adapted from Detoxinista
1 cup coconut milk
1 cup hot brewed coffee
2 tablespoons pumpkin puree
2 tablespoons pure maple syrup
½ teaspoon pumpkin pie spice
Combine all of the ingredients in a high-speed blender, and blend until smooth and creamy. Adjust flavor to taste, and serve warm.

Chocolate Banana Peanut Butter Milkshake – adapted from Detoxinista
2 frozen bananas
¾ cup milk (or non-dairy milk)
1 Tablespoon pure maple syrup
2 Tablespoons cocoa powder
¼ cup natural peanut butter
1 teaspoon vanilla extract
7 ice cubes (about 2 handfuls)
Throw all of the ingredients into a high-powered blender, and blend until smooth and creamy. Pour into two glasses and serve immediately!
Ok, shake! 😉 My husband loves this “smoothie” that you can buy at Tropical Smoothie Cafe, and ever since I bought my Vitamix he’s asked me to make him one. I couldn’t find a copy cat version anywhere, but I think this one is a good substitute for the real thing. Thanks for reading, enjoy!
Peanut Butter Cup Smoothie –
1 banana, cut up and frozen
2-3 cups chocolate frozen yogurt
1 – 2 TBSP peanut butter
1 cup coconut milk
Pour the coconut milk into your blender carafe, followed by peanut butter, banana and yogurt. Blend until smooth, adding more coconut milk if necessary.
Sorry it’s been so long since my last post…I made this several weeks ago to remedy a craving for some real hot chocolate. I didn’t want to make a huge batch so late at night, so this was perfect. I tripled it so my kids could enjoy it too – they loved it! Thanks for reading, enjoy!
1. Place all the dry ingredients in a glass jar with a tight fitting lid and pour the hot water over all. Twist lid on and shake vigorously.
2. Pour contents into a small sauce pot over medium-low heat. Pour in the dairy and stir until combined. Heat gently until the desired temperature is reached. Pour into your favorite mug and top with marshmallows or whipped cream.
Quick Post: Yum! I tried this new-to-me non dairy milk for the first time last week in this smoothie. When I’m craving something sweet, this is what I make. The coconut milk makes this almost like an ice cream shake, but healthy – even better! 5 frozen strawberries
1/2 unsweetened coconut milk
