Avocado Super Smoothie

Avocado Super Smoothie –

  • 1 cup kale, washed and stems removed
  • 1 cup baby spinach, washed and big stems removed
  • 1 medium banana
  • 1/2 avocado
  • 1 small apple, cut into chunks
  • 1/2 cup coconut milk
  • 1/2 cup water, or more depending on how thick you prefer
  • Ice

Directions –

Place all your ingredients in a blender carafe – starting with the liquid and topping off with the heavier items. Process for about 30 seconds until well blended. Pour into a tall glass and enjoy!

Healthier Pumpkin Spice Latte

This was my first pumpkin spice latte ever, so I can’t compare it well to a coffee shop drink. What I can tell you is that this is like pumpkin pie in a cup! It’s also much cheaper and not full of empty calories and syrupy-goodness that is the typical coffee chain offering. Thanks for reading, enjoy!

Healthier Pumpkin Spice Latte – adapted from Detoxinista

  • 1 cup coconut milk
  • 1 cup hot brewed coffee
  • 2 tablespoons pumpkin puree
  • 2 tablespoons pure maple syrup
  • ½ teaspoon pumpkin pie spice

Directions – 
Combine all of the ingredients in a high-speed blender, and blend until smooth and creamy. Adjust flavor to taste, and serve warm.

Peanut Butter Cup Smoothie

Ok, shake! 😉 My husband loves this “smoothie” that you can buy at Tropical Smoothie Cafe, and ever since I bought my Vitamix he’s asked me to make him one. I couldn’t find a copy cat version anywhere, but I think this one is a good substitute for the real thing. Thanks for reading, enjoy!

Peanut Butter Cup Smoothie – 

  • 1 banana, cut up and frozen
  • 2-3 cups chocolate frozen yogurt
  • 1 – 2 TBSP peanut butter
  • 1 cup coconut milk

Directions –

Pour the coconut milk into your blender carafe, followed by peanut butter, banana and yogurt. Blend until smooth, adding more coconut milk if necessary.

Banana and Peanut Butter Breakfast Shake

Quick Post: Another morning, another healthy breakfast! I’m having fun experimenting with all these new breakfast recipes and here’s another one I found but I have modified slightly to make it more substantial with the addition of oats. Thanks for reading, enjoy!
Banana and Peanut Butter Breakfast Shake – adapted from Natural Noshing
  • 1 frozen banana
  • 3/4 to 1 cup of unsweetened almond milk
  • 1/3 cup soaked oats
  • 1 1/2 TBSP unsalted peanut butter
  • 1/2 tsp vanilla extract
  • 1 TBSP ground flaxseed
  • dash of cinnamon

Directions:

1. The night before soak  1/3 cup oats in 1/3 cup of water with a squeeze of lemon juice. Cover and place in the refrigerator overnight.

2. Place all ingredients in a blender and mix until combined. Pour into glass and enjoy!
