Grilled Teriyaki Sandwiches with Pineapple, Bacon and Swiss

One of the biggest stress relieving things I can do for myself is to come up with a weekly meal plan. There are only a few things that are more frustrating and stressful than not knowing what I’m going to make. This was a good week because I easily came up with five meals without really trying and that isn’t something that happens often. This was one of them:

Teriyaki Marinade – heavily adapted from Allrecipes

  • 1/3 cup white sugar
  • 2 TBSP honey
  • 1/2 cup low sodium soy
  • 1/4 cup rice wine vinegar
  • 1 clove garlic, minced
  • 1/3 tsp. grated fresh ginger
  • 1/4 teaspoon ground black pepper
  • 1.5 pounds of boneless, skinless chicken breast – pounded thin
  • these buns
  • 1 pineapple sliced 1/2″
  • 3 strips bacon
  • 3 slices baby swiss
  • romaine lettuce

Directions –

1. Combine first 7 ingredients in a microwave safe container. Heat the marinade for about 1 minute or until the sugar is dissolved. Set aside to cool.

2. Place pounded chicken in a Ziploc bag and pour marinade over top. Marinade for at least 12 hours.

3. Preheat grill to 350 -400 degrees. Grill the chicken for 15 – 20 minutes total. Once you’ve flipped the chicken to cook the other side, put the pineapple slices on the grill. After about 5 minutes, flip the pineapple slices over and place the bacon and cheese on the chicken to warm through.

Buffalo Chicken Calzone

Quick Post: By now you can tell we like buffalo chicken! I love Frank’s Red Hot because it has great flavor and a mild kick to it. I made two calzones tonight – one for the adults and one for the kids. The other calzone had mozzarella, Parmesan, cheddar, pepperoni and sliced baby Portobello mushrooms in it. They both tasted excellent:) I warmed up some marinara sauce for the kids to dip theirs, and for the buffalo calzones I made a quick blue cheese dip. Thanks for reading, enjoy!

Buffalo Chicken Calzone – a Mom Make’s Recipe

  • 3/4 pound roasted chicken breast, shredded
  • 1/4 batch of this pizza dough
  • 1/4 cup Frank’s Red Hot
  • 1/4 cup crumbled Gorgonzola cheese
  • 1/3 cup sharp white cheddar
  • 1/4 cup Parmigiano Reggiano cheese
  • 1 egg plus a splash of water for the egg wash
  • pizza seasoning to taste

Directions –

1. Preheat oven to 475 degrees.

2. Roll out your pizza dough in a large rectangle – about 10×14 inches. Sprinkle your shredded cheddar on the dough leaving at least an inch of space from the edge. Toss your roasted chicken with the Frank’s Red Hot to coat, then layer on top of the cheese. Sprinkle the Gorgonzola and Parmesan cheeses over the top of the chicken.

3. Brush the egg wash around the perimeter of the dough, and then fold the long side of the dough to the opposite side and crimp to seal. Place on a lined baking sheet, brush the top of the calzone with the egg wash, and bake for 15 minutes.

Blue Cheese Dip – a Mom Make’s Recipe

  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup blue cheese
  • fresh cracked pepper to taste

Directions –

1. Mix all ingredients together in a bowl. YUM!

Chicken Parmesan

Quick Post: This recipe is a combination of a few different techniques and ingredients I pulled together from some simple chicken parm recipes. I liked the addition of Panko in this recipe verses the typical Italian breadcrumbs. I pulled the shallow fry method from the same recipe, but baked the chicken, sauce and cheese in the oven before serving like this one. Oh, and I used my favorite marinara sauce for this recipe. This was a tasty and filling meal – even my picky eater happily ate this. Thanks for reading, enjoy!

Chicken Parmesan – a Mom Makes Recipe

  • 4 chicken breast cutlets
  • 1 egg, lightly beaten with 2 TBSP water
  • 1 cup Panko breadcrumbs
  • 1 cup all-purpose flour
  • oregano, salt, pepper to taste (for Panko)
  • 2 TBSP butter
  • 3 TBSP olive oil
  • 1 batch of this marinara or at least 2 jars of your favorite store-bought sauce
  • 1 pound of thin spaghetti
  • 1/2 cup of mozzarella cheese
  • 1/4 Parmigiano-Reggiano cheese

Directions –

1. Preheat oven 400 degrees and put a large pot of water to boil.

2. Clean and dry your chicken well. Set up an assembly line for your breading – one shallow dish for your flour, one for your egg, and one shallow dish for the season Panko. Season your chicken with kosher salt and pepper then lightly coat with the flour, then dip in the egg mixture, then coat the chicken with the seasoned Panko – set aside.

3. Heat oil and butter in a large, heavy bottomed skillet over medium heat until a pinch of the breadcrumb mixture sizzles immediately when added. Add the chicken breasts and fry without disturbing for 5 to 6 minutes, or until golden brown. Using tongs, turn the chicken breasts and fry another 4 to 5 minutes, or until just cooked through and golden brown.

4. Place the finished chicken in a 13×9 baking dish. Top the chicken with enough marinara sauce to cover the tops of each, then sprinkle the parm and mozzarella cheese. Bake for 10 minutes or until the cheese is melted.

5. While the chicken is in the oven, cook off your spaghetti noodles in rapidly boiling, liberally salted water – cook according to package directions. Drain pasta, spoon over some marinara and set alongside your yummy chicken parm! Enjoy!:)

Baked Teriyaki Chicken

I have used this recipe so many times and we’re not sick of it yet. This time however, I served myself a lot less rice than I used to and tons more veggies instead. This picture was taken after I had already eaten some (oops) then I remembered I wanted to blog about it! Normally this is served over white rice and steamed broccoli then topped with some of the sauce the chicken cooked in – it’s so yummy! Thanks for reading, enjoy!

Baked Teriyaki Chicken Ingredients – adapted from Allrecipes.com

  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/2 cup white sugar
  • 1/2 cup soy sauce
  • 1/4 cup cider vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • 12 skinless chicken thighs

Directions –

In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.

Preheat oven to 425 degrees F (220 degrees C).

Place chicken pieces in a lightly greased 9×13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.

Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.


Buffalo Chicken Macaroni and Cheese

Oh, this is too good! While searching for a recipe to use up leftover roasted chicken, I came across this. I had to buy the cheese but I had everything else on hand which is always good:) While reading through a few of the comments, I noticed that several people wrote that this recipe makes “a ton” but they successfully halved it. Well, that sounded like a good idea to me because I didn’t have enough chicken to make three cups anyway. The recipe also doesn’t seem so decadent when you halve the amounts of cheese and butter;) Everyone enjoyed this, but M still prefers this one over all others I’ve made. Honestly, I’m looking forward to eating leftovers;) Thanks for reading, enjoy!

Buffalo Chicken Macaroni and Cheese – adapted from Food Network

  • 7 tablespoons unsalted butter, plus more for the dish
  • Kosher salt
  • 1 pound elbow macaroni
  • 1 small onion, finely chopped
  • 2 stalks celery, finely chopped
  • 3 cups cooked chicken, shredded
  • 2 cloves garlic, minced
  • 3/4 cup hot sauce (preferably Frank’s)
  • 2 tablespoons all-purpose flour
  • 2 teaspoons dry mustard
  • 2 1/2 cups half-and-half
  • 1 pound yellow sharp cheddar, shredded
  • 8 ounces pepper jack cheese, shredded (about 2 cups)
  • 2/3 cup sour cream
  • 1 cup panko
  • 1/2 cup crumbled blue cheese (I used Gorgonzola)

Directions –

Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish. Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 7 minutes. Drain.

Meanwhile, melt 3 tablespoons butter in a large skillet over medium heat. Add the onion and celery and cook until soft, about 5 minutes. Stir in the chicken and garlic and cook 2 minutes, then add 1/2 cup hot sauce and simmer until slightly thickened, about 1 more minute.

Melt 2 tablespoons butter in a saucepan over medium heat. Stir in the flour and mustard with a wooden spoon until smooth. Whisk in the half-and-half, then add the remaining 1/4 cup hot sauce and stir until thick, about 2 minutes. Whisk in the cheddar and pepper jack cheeses, then whisk in the sour cream until smooth.

Spread half of the macaroni in the prepared baking dish, then top with the chicken mixture and the remaining macaroni. Pour the cheese sauce evenly on top.

Put the remaining 2 tablespoons butter in a medium microwave-safe bowl and microwave until melted. Stir in the panko, blue cheese and parsley. Sprinkle over the macaroni and bake until bubbly, 30 to 40 minutes. Let rest 10 minutes before serving.



Taco Chicken

This is so good, super simple but oh, so flavorful. While looking through Publix’s online ad, I discovered that boneless, skinless thighs were on sale this week and immediately I thought of this recipe. It’s marinated in some of my favorite flavors – lime, cumin and chili powder.

I’m serving these grilled with tortillas, this salsa (I was craving it) and my “orange” rice. I’m pretty plain when it comes to taco night because there is always rice, cheese and pico de gallo, or in this case salsa. My family is (thankfully) easy to please most times:) Thanks for reading, enjoy!

Taco Chicken – adapted from Our Best Bites

  • 1 lb. boneless, skinless chicken thighs
  • A couple of juicy limes
  • A splash of red wine vinegar
  • 2-3 cloves garlic, pressed or coarsely chopped
  • 1 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. Kosher salt
  • 1/2 tsp. black pepper

Directions –

1. Combine all ingredients minus the chicken. Place the chicken in a gallon size Ziploc bag and pour the marinade over top. Mush the bag to coat all the chicken well. Place the plastic bag in another container to protect the rest of the fridge in case the bag leaks. Marinade for 4 but no longer than 8 hours.

2. Preheat outdoor grill and cook the chicken pieces for 7 minutes a side. Take off grill, cover with foil and let rest for about 5 minutes. Enjoy!

Guacamole Ingredients – adapted from Alton Brown

  • 3 Haas avocados, halved, seeded and peeled
  • 1 lime, juiced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne
  • 1/2 medium onion, diced
  • 2 Roma tomatoes, seeded and diced
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced

Directions –

In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

Restaurant Style Salsa ingredients – adapted from The Pioneer Woman

  • 1 can (28 Ounce) Whole Tomatoes With Juice
  • 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies) *I drain these*
  • ¼ cups Chopped Onion
  • 1 clove Garlic, Minced
  • 1 whole Jalapeno, Quartered And Sliced Thin
  • ¼ teaspoons Sugar
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Cumin
  • ½ cups Cilantro (more To Taste!)
  • ½ whole Lime Juice

Directions –

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

I know this looks gross, but I assure you – if you love blue cheese you’ll love the taste of this!
Buffalo Chicken Dip ingredients –

  • 1 skin-on, bone-in chicken breast, roasted and shredded
  • 1 – 8 oz package of cream cheese at room temp
  • 1/2 cup blue cheese crumbles
  • 1/2 cup Monterey jack cheese
  • 1/2 blue cheese dressing
  • 1/2 cup Frank’s Red Hot

Directions –

Preheat oven to 350. Combine all ingredients in a 8×8 inch baking dish, cover with foil and bake for 20 minutes. Serve with celery sticks.

Cobb Salad

Quick Post: M requested this for dinner – I am usually appreciative of meal suggestions because that’s less pressure on me. Cobb salad has a lot going on, but it’s super easy to throw together. I made this one a little more flavorful by marinating the chicken “souvlaki style”. For my salad, I added bell pepper and portobello mushrooms to up the veg content! Thanks for reading:o)

Stuffed Portobellos

Quick Post: This photo is in no way a representation of its taste! I think bacon would have been a great addition to this, but sadly, M ate the last of the leftover bacon tonight. I added some cooked chicken instead which was a fine substitute – but bacon it isn’t!;o) This meal came together fairly quickly and cooked up in the oven in 15 minutes. Thanks for reading, enjoy!

Stuffed Portobellos Ingredients – adapted from How To: Simplify

  • 3 tablespoons of extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 3 portobello mushrooms caps, with stems removed
  • Salt and pepper (I added a 1/4 tsp of Italian seasoning too)
  • 1/2 red onion, chopped
  • 1/3 cup of crumbled goat cheese
  • 1 whole tomato, diced
  • 3 slices bacon, fully-cooked and crumbled (I used some cooked chicken instead)
  • 1/4 teaspoon freshly chopped basil (I love basil but I didn’t have any)

Directions –

Preheat oven to 350 degrees. Prepare a baking dish by covering it with aluminum foil.

Whisk together the olive oil and balsamic vinegar in a small bowl. Brush the mixture on the aluminum foil and then brush the mixture on the tops and bottoms of the mushrooms caps. Sprinkle the caps with salt and pepper and then set them, gill side down, on the baking dish.

Pour 1 tablespoon of the oil and vinegar mixture in a saucepan and saute the onion until it becomes translucent.

Place baking dish in the oven and bake the caps for about 5 minutes. After 5 minutes, flip the mushroom caps and continue to bake for 5 minutes. Remove the mushroom caps from the oven.

Fill each of the mushrooms caps with goat cheese, tomato, onion and bacon. Sprinkle with salt, pepper and basil.

Place in the oven for 5 minutes and serve warm.


Chicken Noodle Soup

Poor M is sick with the flu, but thankfully the fever and headaches haven’t made him nauseated. I asked what he’d like for dinner and of course, he requested chicken noodle soup. “Great” I thought…I always want to go the extra mile (as much as possible) when he requests something, and I really didn’t feel like making stock from scratch…it takes too long. This method I used seemed like a good substitute for it. I took a little help from the store with some stock in a box and doctored it up a bit to cook the chicken, which enriched the flavor and richness. This took more effort than I originally wanted to put into it (the rainy, cloudy weather makes me lazy) but it was so worth it because the whole family enjoyed eating it and the leftovers will taste even better. Chicken Noodle Soup ingredients – a Mom Makes original recipe

  • 1 – 4 pound whole chicken, rinsed well
  • 1 carton of chicken stock
  • 1 carton of vegetable stock
  • 2 carrots, cut into chunks
  • 2 celery ribs, cut into chunks
  • 1/2 onion
  • 3 garlic cloves, smashed
  • 5-7 sprigs thyme
  • 2 sprigs rosemary
  • 1/2 TBSP of whole peppercorns
  • 4 – 6 cups water

Soup ingredients –

  • 3 cups egg noodles
  • 3 carrots, diced
  • 3 celery ribs, diced
  • 1 – 2 cups frozen peas
  • 1/2 onion, diced
  • 10 – 12 cups chicken stock
  • 3 cups of shredded chicken
  • 2 TBSP unsalted butter
  • 1 TBSP olive oil
  • salt and pepper to taste
  • dried parsley flakes (optional)

Directions for Stock –

1. In a 8 quart stock pot or larger, place all ingredients and cook for one hour. Be sure to skim fat and scum off the top while cooking. Once the chicken is cooked, carefully remove it from the stock pot and place on a foil lined half sheet pan to cool – at least 40 minutes.

2. Strain the stock through a fine sieve and discard all vegetables and herbs. Skim the remaining fat off the top of the stock.

3. Once the chicken is cool enough to handle shred into uniform pieces.

Directions for Soup –

1. Heat a saute pan to medium and add butter and olive oil. Once the butter melts, add all your diced veggies to the pan. Saute for 10 minutes or until vegetables are tender. Meanwhile, place a soup pot with the 10 – 12 cups of chicken stock to simmer and add the cooked vegetables and shredded chicken to the soup pot. Bring to boil, season to taste and add the egg noodles and peas. Cook until the egg noodles are tender, about 8 to 10 minutes. Taste again, season if needed – enjoy the soup with a crusty loaf of bread…yum!
