Cheddar Biscuits

Quick Post: I made these to go with this salad. They were cheesy and delicious. The End!

Cheddar Biscuits – adapted from No More To Go

  • 1 ¾ cups King Arthur Self-Rising flour
  • 1 teaspoon salt (*next time I will use less salt – at least 1/4 tsp less*)
  • ¼ teaspoon garlic powder
  • ½ cup butter, cold
  • 1 cup cheddar cheese, shredded
  • ¾ cup buttermilk

Butter:

  • 3 tablespoons butter, melted
  • ½ teaspoon garlic powder
  • ¾ teaspoon dried parsley

Directions –

1. Preheat oven to 400. Line a rimmed baking sheet with parchment paper or spray lightly with canola oil.
3. Combine flour, salt, and garlic powder in a large bowl.
4. Using a pastry cutter, food processor, or just two forks, cut in the cold butter.Combine the butter using this method until you have pieces of butter no bigger than a pea.
6. Add cheese and milk and mix with your hands until just combined.
8. Drop using a ¼ cup measuring cup onto your prepared baking sheet.
9. Bake for 11-13 or until the tops of the biscuits are light brown.
10. While the biscuits are cooking, combine the glaze ingredients in a small bowl.
11. When the biscuits come out of the oven, brush them with the butter glaze and serve

Self-Rising Biscuits

The kids let us sleep in this morning, which was a happy surprise. However, it meant that it was nearly “brunch time” by the time we rolled out of bed. Everyone wanted breakfast and had their own ideas of what it should be. One wanted pancakes, the other expected French toast – another suggested outside options. In an effort to avoid that, I remembered this recipe, and that I had the all important eggs and bacon! These biscuits came together quickly and were so easy to make. I cut the biscuits into squares to save time and avoid overworking the dough and piecing the scraps together to make more biscuits.  We enjoyed these sandwich style, but my favorite way is with butter and apricot preserves 🙂

I posted earlier this week about receiving a free bag of King Arthur Unbleached Self-Rising flour, and I thought I should give my opinion of it. I am a loyal KAF customer and have at least 3 different types of flour from this brand; so, it comes as no surprise to me that I would love working with this 🙂 . Their website is full of recipes, and my family and friends favorite one so far is the fudge brownies! I also have several specialty items I have purchased through the online shop, and the quality is superior and I always get consistent results with my baked goods. What I appreciated even before I opened the bag was that it’s unbleached. I have yet to find another company that makes unbleached, self-rising flour – which leads to the other unique quality: aluminum free baking powder. Because it’s aluminum-free, there is no weird “tinny” flavor, so your baked goods will be light, fluffy and flavorful! Thanks for reading, enjoy!

Easy Self-Rising Biscuits – from King Arthur Flour

Directions:

1) Preheat the oven to 425°.

2) Place the flour in a bowl. Work in the butter or shortening just until crumbs are the size of large peas.

3) Add 2/3 cup of the milk or buttermilk, and stir until the mixture holds together and leaves the sides of the bowl, adding more milk or buttermilk if needed.

4) Scoop the dough onto a well-floured surface, and fold it over on itself several times, using more flour as needed to prevent sticking.

5) Roll or pat the dough into a 5″ x 8 1/2″ rectangle about 1/2″ to 3/4″ thick.

6) Cut biscuits with a sharp, round 2″ cutter, dipping the cutter into flour between cuts to reduce sticking. Or cut the rectangle into 12 small rectangular biscuits, which will allow you to skip the step of re-rolling and cutting scraps.

7) If you’ve used a round cutter, pat the scraps together, and cut additional biscuits.

8) Place the biscuits on an ungreased baking sheet, leaving about 1″ between them for crisp biscuits. Arrange biscuits so they’re barely touching for soft-side biscuits. For higher-rising soft-side biscuits, place biscuits in an 8″ round pan.

9) Bake the biscuits for 10 to 14 minutes, or until they’re a light golden brown.

10) Remove them from the oven, and serve hot. Cool leftovers completely, wrap airtight, and store at room temperature for several days; freeze for longer storage. To refresh room-temperature biscuits, place on a baking sheet, tent lightly with foil, and bake in a preheated 350°F oven for 10 to 13 minutes, until heated through.

Yield: about 1 dozen 2″ biscuits.

Homemade Fudge Pops

Homemade Fudge Pops – adapted from Brown Eyed Baker

  • ¼ cup semisweet chocolate chips
  • 2/3 cups granulated sugar
  • 2 tablespoons cornstarch
  • 3 tablespoons natural unsweetened cocoa powder
  • 2½ cups whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter

Directions:

1. Melt the chocolate chips in the microwave on 50% power in 30-second increments, stirring after each, until melted and smooth.

2. Combine the melted chocolate, sugar, cornstarch, cocoa powder, and milk in a medium saucepan over medium heat and cook, stirring frequently, until the mixture thickens, about 10 minutes. Remove from heat, add the vanilla and butter, and stir until well combined.

3. Let the mixture cool slightly (it should still be warm but not hot to the touch), and then pour into popsicle molds. Freeze for 30 minutes, and then insert sticks. Freeze completely before serving.

Cheddar and Mozz Mac

Quick Post: This is his fave mac n’ cheese, but now with a new cheese combination. This was a last-minute dinner decision, so I used what I had on hand for this, and thankfully it worked out. I know that cheddar and mozzarella isn’t an “outside the box” kind of pairing, but for someone who rarely steps outside a recipe, it’s blog-worthy 😉 This blog is as much about archiving as it is sharing with all you lovely readers out there. Browned Butter CCC

This is my first time making brown butter, but it seems like a very popular flavor among food bloggers. The browned butter smells nutty and caramely, so it’s pretty safe to assume it will add that to the flavor of these cookies. Plan accordingly if you are going to make these…I read through the instructions after I finished the butter, only to learn that the batter needs to sit in the fridge overnight. Upon discovery of this “minor” detail, I coyly sent a text to the husband who already anticipated cookies for dessert tonight – “you’re not going to like me”. He’s pretty bummed, and honestly I’m not crazy about having to wait longer for these, but in the interest of all things yummy – I will wait! 😉

In case you’ve never browned butter before, here are some helpful tips and instructions. If you have one, it’s best to brown the butter in a stainless pot or pan so you can be sure of the color. Also, it’s fairly easy to go from perfectly brown to burnt, so start slow so you don’t waste your butter. Mine took nearly 20 minutes to get to the color I was comfortable with. Now that I’m pretty confident with this new skill I’ll be sure to search for recipes or I might even try brown butter for dishes we love already.

Verdict: These cookies are slightly chewy, with nice, crispy edges; and flavor of these is buttery, nutty and caramely! I know that last description isn’t a real word, but you know what I mean 😉 Thanks for reading, enjoy!

 

Browned Butter Chocolate Chip Cookies – adapted from The Curvy Carrot

  • 16 tablespoons (2 sticks) unsalted butter
  • 2 and 1/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup granulated sugar
  • 1 cup light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons milk
  • 1 and 1/2 teaspoons vanilla
  • One bag semisweet chocolate chip cookies

Directions:

1. In a medium saucepan over medium heat, melt the butter and cook, swirling the pan occasionally, until it is frothy and browned, about 15-20 minutes or so (the browning process goes quickly once it starts so watch it carefully.)

2.  Transfer the butter to a small bowl and let cool to room temperature.

3.  In a separate bowl, whisk together the flour, salt, and baking soda.

4. In the bowl of your standing mixer fitted with the paddle attachment, beat the browned butter and both types of sugar, until smooth and light, about 7 minutes.

5. Add in the whole egg, the egg yolk, milk, and the vanilla.

6. Decrease the mixer speed to low and add the dry ingredients.

7. Gently fold in the chocolate chips.

8. Cover the cookie dough tightly with plastic wrap and refrigerate overnight.

9. The next day, let the dough come to room temperature.  Meanwhile, preheat the oven to 375 degrees and line two baking sheets with parchment paper.

10. Using a small cookie dough scoop, place the dough onto the prepared baking sheets, spacing them about 2 inches apart.

11. Bake each cookie sheet (one at a time) until the cookies are golden brown on the bottom, about 8 minutes or until edges are lightly browned. Let cool on the baking sheets set on wire racks for 3 to 5 minutes or until set. Transfer the cookies to the wire rack to cool. Makes about 36 small cookies.

Belgian Buttermilk Waffles

I haven’t made breakfast for the fam in a while. I did a quick Google search of “waffles” and found this highly rated recipe on Epicurious.com. At first I balked at the “3/4 stick of butter” and almost passed this one up. Then I read the amount of waffles this batch makes and didn’t feel too bad about it. In my opinion, there are many more breakfast items out there with lots more “bad stuff” in it than these. This recipe is similar to one I tried earlier, so I wondered what qualified this as a “Belgian” waffle – I thought maybe it was all the butter (the other recipe used oil). It was just a guess but apparently it’s the height from yeast and deep pockets that make it a “Belgian”. According to my search, this version is similar to a “Brussels” waffle. I have a yeasted waffle bookmarked for future experimentation, but I don’t wake up that early on the weekend to wait for a rise – or remember to plan ahead for it.

Verdict: These were really tasty, nice and buttery but not greasy; and I liked them even more the next day out of the toaster. The waffles get a little crunchy and I don’t even need maple syrup. I will make these again 🙂 Thanks for reading, enjoy!

Belgian Buttermilk Waffles – adapted from Epicurious

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cups well-shaken buttermilk
  • 3/4 stick (6 tablespoons) unsalted butter, melted and cooled to room temperature
  • 2 large eggs
  • Vegetable oil for waffle iron

Directions:

Put oven rack in middle position and put a large metal cooling rack directly on it. Preheat oven to 250°F and preheat waffle iron.

Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.

Whisk together buttermilk, melted butter, and eggs in another bowl, then whisk into flour mixture until just combined.

Brush hot waffle iron lightly with vegetable oil and pour a slightly rounded 1/2 cup of batter into each waffle mold (see cooks’ note, below). Cook waffles according to manufacturer’s instructions until golden and cooked through, about 3 minutes. Transfer as cooked to rack in oven to keep warm, keeping waffles in 1 layer to stay crisp. Make more waffles in same manner.

Skillet Cookie

Quick Post: If you’re a fan of under-cooked cookies, this is the dessert for you. I happen to love thin, crunchy cookies, but my husband loves doughy ones. It’s fun to make a giant cookie or any over the top dessert when company is over and it’s always a good excuse to choose an extra-decadent recipe. “Senior” is in town and what better way to welcome his arrival than something I know he wont find anywhere else. Skillet Cookie – adapted from Sophitimom
  • 1 stick (8 tablespoons) unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 cup chocolate chunks

1. Preheat oven to 350 degrees. Melt butter in an 8 inch cast iron skillet set over medium-low heat. Stir in sugars and vanilla and remove from heat. Let rest until pan is warm, but no longer very hot, about 5 minutes.

2. Crack an egg onto the butter and sugar mixture, and use a fork to whisk it well into the mixture. Place flour, baking soda, and salt on top, and very carefully stir into the mixture until smooth and well-mixed. Stir in chocolate chunks. Place in the oven for 20 – 25 minutes, or until starting to turn golden on the top and around the edges, but soft in the center. Serve with vanilla ice cream.

Lemon Thyme Chicken


Quick Post: I made this awhile back and forgot to post! It’s from Annie’s Eats, so if you’re a fan of hers, you know that she wont steer you wrong. This dinner is cheap, quick and flavorful and tasted great with this garlic rice pilaf – which is also one of Annie’s recipes. Pair it with a nice green salad and you’ve got a complete meal that is good enough to share with company. Thanks for reading, enjoy!

Lemon Thyme Chicken – adapted from Annie’s Eats

  • 2 boneless, skinless chicken breasts, butterflied into halves (4 pieces total)
  • Kosher salt and freshly ground pepper
  • ½ cup all-purpose flour
  • 1½ tbsp. olive oil
  • 2 cloves garlic, minced
  • 2 tsp. fresh thyme leaves, minced
  • ½ cup dry white wine
  • ¾ cup low-sodium chicken broth
  • Juice of 1 lemon
  • 3 tbsp. butter

Directions

  • Season both sides of the chicken pieces with salt and pepper.  Place the flour in a shallow bowl, and dredge the chicken pieces in the flour, shaking off the excess.  In a large skillet, heat the olive oil over medium-high heat.  Add the chicken pieces to the pan and saute until lightly golden, about 2-3 minutes per side, and an instant-read thermometer reads 160˚ F in the thickest part of the chicken.  (Keep in mind that pieces of different sizes will finish cooking at different times to avoid overcooking.)  Remove the chicken pieces to a plate, tent with foil, and set aside.
  • Add the garlic and thyme leaves to the pan and sauté  just until fragrant, about 1 minute.  (If necessary, add an additional small drizzle of olive oil if most of the oil was absorbed by the chicken.)  Off the heat, add the wine to the pan, scraping the bottom of the pan to loosen any browned bits.  Return the pan to the heat and bring the liquid to a simmer.  Stir in the chicken broth.  Reduce until the sauce has thickened, about 4-5 minutes.  Add the lemon juice to the pan.  Add in the butter and whisk until completely melted.  Season with salt and pepper to taste.  Serve immediately, spooning the sauce over the chicken.

Shrimp Fettuccine Alfredo

Quick Post: Yet another new recipe find thanks to Pinterest! I love meals that are restaurant quality at a fraction of the cost, especially when there are no fancy ingredients required. My family loves shrimp as you can see from past posts, and this is another dinner to go in the rotation. It’s definitely not something I would make all that often, though! Butter, heavy cream and lots of cheese, plus carbs? Yes, please! I had a partial stick of butter with 5 tablespoons left and I used a combination of half and half and heavy cream. I know I probably didn’t save many calories and fat, but it was the thought that counts, right? 😉 Thanks for reading, enjoy!
Shrimp Fettuccine Alfredo – adapted from The Candid Appetite
    • 1 pound dried or fresh Fettuccine
    • 6 tablespoons unsalted butter
    • 1 shallot, minced
    • 3 cloves of garlic, minced
    • 1/2 teaspoon red pepper
    • 1 1/2 pounds shrimp, peeled and deveined
    • 1 cup heavy cream
    • 1 cup finely grated Parmigiano-Reggiano
    • kosher salt, to taste
    • freshly ground black pepper, to taste
    • Fresh Basil, sliced

Directions –

Cook the fettuccine in a pot of rapidly boiling salted water until al dente. Drain in a colander, reserving 1 cup of the pasta cooking liquid.

While the pasta is cooking, melt the butter in a medium pan over medium-high heat. Add shallots, garlic and pepper flakes and saute until tender. Add the shrimp, in a single layer and allow to cook on the first side for 3-4 minutes. Or until the edges turn pink. Give them a flip and continue to cook for 1-2 minutes. Once cooked transfer to a platter or plate, and allow to rest while you finish the sauce. Add heavy cream to the pan and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat.

Return the pasta to the pot it was cooked in, set over medium-high heat along with some of the reserved cooking liquid. Add the butter-cream mixture, half of the Parmesan, the cooked shrimp and toss to combine thoroughly. Season with salt and pepper, to taste. Sprinkle with remaining parmesan, and basil. Serve immediately. Enjoy.

Rainbow Cupcakes

I have seen this recipe all over the place! It’s so fun and easy, especially if you’re using a mix. Well, I did use a mix, but a homemade one, but it’s worth making for the piece of mind it brings knowing what is in it. In order to make sure I had an equal amount of each color for these, I weighed out the amount in cups (8 ounces) and used my smallest disher to make sure I put roughly the same amount of each color batter in the cups. These were a lot of fun to make, and the kids enjoyed helping add the color to the batter. I liked the flavor of these and the almond extract tastes kind of like cherry to me for some reason. Next time I will try the same recipe, but with cake flour because I think all the stirring made the cupcakes more dense than I expected. I’m sure if I left the batter white, that wouldn’t have been a problem.
The buttercream was so fluffy, light and not too sweet. I found a recipe that I knew I needed to cut in half and it worked out perfectly. I’m not a “frosting” lover, but this buttercream was spoon licking good!

Overall, I’m really pleased with how these turned out. It was my first white cake I have ever made. I had never used almond extract before either, but I liked the flavor that it gave to these cupcakes. Thanks for reading, enjoy!

Rainbow Cupcakes – 

  • One batch of white cake mix
  • 3/4 cup of unsalted butter, at room temp
  • 5 egg whites (or 1 cup of Egg Beaters pure egg whites)
  • 1 cup milk
  • 2 tsp. vanilla extract
  • 1/2 tsp almond extract
  • *equipment – five cups, five spoons, gel food coloring, #60 disher, and muffin papers
Directions –
1. Cream butter. Add egg whites, one at a time until mixed, (mine never became a cohesive batter, but don’t worry). Add milk, vanilla and almond extract then slowly add the dry mixture in batches. Be sure to scrape down the sides of your bowl and do not overmix.
2. Divide the batter into five cups, then add a one color into each cup, (*I used pink, yellow, green, blue and purple gel colors. Liquid tends to thin out batters or icing, and you’ll use less of the gel vs. liquid) until your desired shade is achieved.
3. Prep your muffin tin by adding white muffin papers (you can see the colors through the white) Using a small disher (size 60) or a tablespoon measure, add your colored batter to each muffin cup in your desired pattern.
4. Bake in a preheated 350 degree oven for 17-20 minutes or until done. Cool in the pan for about five minutes, then remove the cupcakes and place them on a wire rack to cool.

Vanilla Buttercream – adapted from Apron Days

  • 4 cups confectioners sugar, sifted
  • 2 cups butter, room temp
  • 2 teaspoons vanilla extract
  • 4 tablespoons whipping cream
  • a good pinch of salt
 Directions –
1. Cream butter and sugar on low-speed until combined, then beat on medium speed for several minutes (the time here is crucial in order to obtain a lighter frosting, so don’t skimp.)
2. Add vanilla, cream, and salt and beat on medium speed for another couple of minutes, adding more cream if you want an even lighter consistency (here’s where you would add food coloring, too, if you’d like).
