Party Mix – adapted from Food.com

  • 1 (11 ounce) package pretzels
  • 1 (10 1/2 ounce) package miniature peanut butter filled butter flavor crackers (I use Ritz)
  • 1 cup dry roasted peanuts
  • 1 cup sugar
  • 1/2 cup butter or 1/2 cup margarine
  • 1/2 cup light corn syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 (10 ounce) package M&M’s
  • 1 (18 1/2 ounce) package candy corn

Directions –

1. In a large bowl, combine first 3 ingredients.
2. In a large saucepan, combine sugar, butter and corn syrup.
3. Bring to a boil over medium heat; boil for 5 minutes.
4. Remove from the heat; stir in vanilla and baking soda (mixture will foam).
5. Pour over pretzel mixture and stir until coated.
6. Pour into a greased 15×10 inch baking pan.
7. Bake at 250 degrees for 45 minutes, stirring every 10 minutes.
8. Break apart while warm.
9. Cool completely.
10. Toss with M&M’s and candy corn.
11. Store in airtight container.

Pretzel Dogs

These are seriously good! My sister made these for our 4th of July party this summer and they were a big hit with kids and adults alike. In an effort to redeem these nutritionally (every little bit helps), I used half white whole wheat and half all-purpose flour for these. Also, the hot dogs are uncured, grass-fed beef…yes, I am a food snob! 😉

This dough is so easy to work with and easily rolled, and shaped without that annoying snap-back of some other doughs I have worked with. Be careful when you add the baking soda to your pot of boiling water, as it will boil more aggressively. Use a slotted spoon to carefully add the dogs to the pot and, again watch for the crazy boiling water!  We’re going to experiment with these in the kid’s lunch for school tomorrow – here’s hoping for no soggy pretzel dogs! 😉

UPDATE: The kids took one each in their lunch yesterday, and they didn’t become soggy! It helps that I didn’t refrigerate the leftovers, and I ate some for lunch too and they still tasted great. I’m really happy with these, and no one could tell that they’re nearly half whole wheat! Thanks for reading, enjoy!

Pretzel Dogs – adapted from Fake Ginger

  • 1 tablespoon sugar
  • 1½ cups warm water
  • 2 teaspoons kosher salt
  • 1 package dry active yeast
  • 2 1/2 cups all-purpose flour (312 grams)
  • 2 cups white whole wheat flour (240 grams)
  • 2 tablespoons unsalted butter, melted and cooled
  • 10 cups water
  • â…” cup baking soda
  • 1 large egg yolk, beaten with 1 tablespoon water
  • Pretzel salt (or kosher salt), for topping
  • 8 hot dogs, cut in half (*I used these*)

Directions:
Combine the warm water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Let the mixture sit for about 5 minutes, until the yeast is foamy and begins to smell of yeast.
Add the flour and butter to the yeast mixture. Attach the dough hook to the stand mixer and, on medium-low speed, combine the mixture until the dough pulls away from the sides of the bowl and appears shiny, roughly 4 to 5 minutes.
Spray a large bowl with non-stick spray (or lightly grease with vegetable oil) and place dough in greased bowl. Cover with plastic wrap. Place bowl in a warm area and let dough rise for about 1 hour, or until doubled in size.
Preheat oven to 450 degrees. Line two cookie sheets with parchment paper. Spray parchment paper with non-stick spray. Set aside.
In a large pot, bring the 10 cups of water and the baking soda to a roiling boil.
Place the dough on a greased surface, and divide into 16 equal pieces. Roll each piece into a long rope, roughly 12 inches long. Carefully wrap each piece around a half hot dog. Pinch the ends together to seal the dough.
Boil the shaped pretzels and pretzel dogs, one at a time, in the baking soda water for 30 seconds each. Using a slotted spatula, remove each pretzel dog from the water and place it on a drying rack to allow any extra baking soda mixture to drip off.
Place the boiled pretzel dogs back on a parchment lined baking sheets.
Brush with beaten egg yolk and sprinkle with pretzel or kosher salt.
Bake until golden brown, roughly 14 to 15 minutes. Transfer pretzel dogs to a cooling rack for a few minutes before serving. Serve with a variety of mustards.

Cheese Sauce

Quick Post: When faced with the dilemma – “what’s for lunch?” I quickly came up with this solution – nachos! What is a nacho without cheese sauce, right? I remembered pinning this  awhile back and immediately got to work on it. Three ingredients, maybe ten minutes,  resulted in a really tasty cheese sauce that was perfect on our nachos. While I refried these beans, my husband stirred this sauce over medium heat until it became thick and smooth. I successfully transformed leftovers into a fun lunch that everyone enjoyed…score one for me! 😉 Thanks for reading, enjoy!

Cheese Sauce – adapted from Serious Eats

  • 8 ounces extra sharp cheddar cheese, grated
  • 1 tablespoon corn starch
  • 1 (12-ounce) can evaporated milk
  • 2 teaspoons hot sauce (we used green Tabasco)

Directions –

Add cheese and cornstarch to large bowl. Toss to combine. Transfer to medium saucepan. Add 1 cup evaporated milk and hot sauce. Cook over low heat, stirring constantly with whisk until melted, bubbly, and thickened (about 5 minutes). Mixture will look thin and grainy at first but will thicken and come together after heating. Thin to desired consistency with additional evaporated milk. Serve immediately with fries, tortilla chips, burgers, or hot dogs

Cheddar Biscuits

Quick Post: I made these to go with this salad. They were cheesy and delicious. The End!

Cheddar Biscuits – adapted from No More To Go

  • 1 ¾ cups King Arthur Self-Rising flour
  • 1 teaspoon salt (*next time I will use less salt – at least 1/4 tsp less*)
  • ¼ teaspoon garlic powder
  • ½ cup butter, cold
  • 1 cup cheddar cheese, shredded
  • ¾ cup buttermilk

Butter:

  • 3 tablespoons butter, melted
  • ½ teaspoon garlic powder
  • ¾ teaspoon dried parsley

Directions –

1. Preheat oven to 400. Line a rimmed baking sheet with parchment paper or spray lightly with canola oil.
3. Combine flour, salt, and garlic powder in a large bowl.
4. Using a pastry cutter, food processor, or just two forks, cut in the cold butter.Combine the butter using this method until you have pieces of butter no bigger than a pea.
6. Add cheese and milk and mix with your hands until just combined.
8. Drop using a ¼ cup measuring cup onto your prepared baking sheet.
9. Bake for 11-13 or until the tops of the biscuits are light brown.
10. While the biscuits are cooking, combine the glaze ingredients in a small bowl.
11. When the biscuits come out of the oven, brush them with the butter glaze and serve

Baked Zucchini Fries and Ranch Dressing

This recipe is floating around Pintrest lately. I knew I would have to follow my sister’s lead and serve these alongside hamburgers. These were really tasty and a healthier alternative to fries, and if you haven’t made homemade ranch before, you really should!  It’s fresh, creamy, flavorful, and what makes it even better is that it’s cheap to make and full of ingredients that you can pronounce. P.S. I reheated the leftover “fries” in the oven at 350 degrees for about 8 minutes, and they were just as crispy! 🙂

Baked Zucchini Fries – adapted from Confections of a Foodie Bride

  • 1/4 cup AP flour
  • 2 eggs
  • 2 cups Panko breadcrumbs
  • Salt
  • Pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (*I forgot to add this, but it would have been a nice addition*)
  • 1 lb zucchini, cut into 4-5-inch sticks

Directions –

  1. Preheat oven to 425 and place a cooling rack in your baking sheet.
  2. Place flour in a large zipper bag.
  3. Whisk eggs with 2 Tbsp water and place in a shallow dish.
  4. Place Panko, salt, pepper, garlic powder, and cayenne pepper in a shallow dish and mix to combine.
  5. Place zucchini in the bag with the flour and shake until well coated. Dip the zucchini into the egg and then into the panko, turning to coat well.
  6. Place breaded zucchini on the baking sheet.
  7. Bake 18-20 minutes, until golden brown.

Buttermilk Ranch Dressing – adapted from Confections of a Foodie Bride

  • 3/4 cup mayonnaise
  • 3/4 cup Greek yogurt or sour cream
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1/4 to 1/2 cup buttermilk
  • 1 tsp dried parsley
  • 1 tsp dried chives
  • 1/2 tsp dried dill
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/4 tsp white pepper

Directions –

  1. Place all ingredients with 1/4 cup of buttermilk in a blender.
  2. Blend for 10 seconds. Check consistency and blend in additional buttermilk if desired. Less buttermilk for dipping, more for dressing.
  3. Store in an air-tight jar in the fridge for a week or more.

Baked BBQ Pork Taquitos

Quick Post: These were so good! I have made the recipe that these taquitos were inspired by, and those are amazing too. We all really enjoyed these, and my husband didn’t even mind/notice that there were some things in these he would normally pass on. The flavor compliment each other really well and all my modifications are listed below. Thanks for reading, enjoy!

Baked BBQ Pork Taquitos – adapted from Pink Parsley

  • 4 oz. cream cheese, softened to room temperature (reduced-fat is fine)
  • 1/3 cup bbq sauce
  • 1/2 tsp paprika
  • 1/2 tsp chile powder
  • 1/2 tsp garlic powder
  • 1 garlic clove, minced
  • 1/2 tsp mustard powder
  • 1/2 tsp brown sugar
  • pinch red pepper flakes
  • kosher salt and pepper to taste
  • 3 scallions, minced
  • 3-4 Tbs minced fresh cilantro
  • 2 1/2 cups shredded or chopped pork
  • 1 cup sharp cheddar cheese
  • 10-15 (6-inch) corn or flour tortillas
  • canola oil for brushing
  • BBQ sauce or ranch dressing for dipping
Directions:
Preheat the oven to 425 degrees and spray a baking sheet with cooking spray. In a large bowl, combine the cream cheese with the bbq sauce, paprika, garlic powder, mustard, brown sugar, chile powder, red pepper flakes, cilantro, scallions, and 1/4 tsp kosher salt.  Fold in the pork and cheese.  Taste and season with additional salt and pepper if necessary. Working 3-4 tortillas at a time, stack them on a microwave-safe plate and cover with a damp paper towel.  Cook 30 seconds, or until tortillas are soft and pliable.Spoon 2-3 tablespoons of filling onto the lower third of each tortilla, and roll tightly.  Place seam side-down on the prepared baking sheet.  Repeat with remaining tortillas and filling.Brush the taquitos lightly with canola oil, sprinkle with salt.  Bake 15-20 minutes, or until the tortillas are crisp and golden-brown.  Serve with bbq sauce and ranch dressing for dipping.

Pepperoni Pizza Puffs

I made these once before, but I think all the pictures that I took stunk, so I decided not to post about them. I have declared Wednesday night to be “Fun Kid Dinner Night”, because M is never able to be home with us on Wednesday nights. It’s a good opportunity to make something I know he wouldn’t care for, and that way I can still get my mushrooms, bell peppers, mustard and onions in somewhere. I mentioned her before that he’s a little picky 😉

Verdict: These were really good and would make a great appetizer. The ratio of cheese and pepperoni is quite a bit higher than batter, so oil up your muffin tin liberally! I like my addition of chili flake which gave these a little kick. Also, marinara is a must for dipping which makes these little puffs a quick substitute when you’re craving pizza. Pepperoni Pizza Puffs – adapted from Gimme Some Oven

  • 3/4 cup flour
  • 3/4 tsp. baking powder
  • 1/2 tsp. dried oregano
  • 1/4 tsp. dried basil
  • pinch of chili flake
  • onion powder
  • garlic powder
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 4 oz. mozzarella cheese, shredded
  • 4 oz. pepperoni, diced
  • Pecornino Romano cheese to taste
  • 1/2 cup pizza sauce (homemade or store-bought)

Directions:

Preheat oven to 375o.  Grease a 24-cup mini muffin pan.  In a large bowl, whisk together the flour, baking powder and dried seasonings; whisk in the milk and egg.  Stir in the mozzarella and pepperoni; let stand for 10 minutes.

Stir the batter and divide among the mini-muffin cups.  Bake until puffed and golden, 20 to 25 minutes.

Warm the pizza sauce, then stir in 1 tablespoon basil.  Sprinkle the puffs with the remaining 1 tablespoon basil.  Serve the puffs with the pizza sauce for dipping.

Cilantro Lime Flank Steak Tacos with Homemade Tortillas and Salsa Fresca

There is a lot going on here, but all of it was pretty tasty. Rather than post the full recipe for the flour tortillas, here is the link. I had some issues while making them! They’re not difficult to make, but when I thought of separating them with pieces of waxed paper (to save on counter space), that’s when it all fell apart. The dough stuck to the paper so badly! Most of the tortilla rounds became mangled while I tried to remove them from the paper – I was so bummed! I did take some of the scraps and rolled them out again, which is a little more difficult the second time around. The surviving tortillas turned out pretty well, but they’re nothing like the best tortillas I have ever had! Those are found in San Diego, California at Old Town Mexican Cafe! Cilantro Lime Marinade & Flank Steak Tacos – adapted from Simply Scratch
  •  1/3 cup grapeseed oil
  • Juice of 1 Lime
  • 1 Garlic Clove, smashed
  • A handful of Cilantro
  • 1/2 red onion, roughly chopped
  • 2 teaspoons of Honey
  • 1/2 teaspoon of Cumin
  • 1/2 teaspoon of Ancho-Chili Pepper
  • 1/2 teaspoon Red Pepper Flakes
  • Kosher Salt and Fresh Black Pepper, to taste
  • 1.5 – 2 pounds flank steak
1. Place the steak in a zip top bag, set aside. Combine all ingredients and blend well with a stick blender, or mini food processor. Pour marinade over the steak, place it in the fridge to marinade for several hours.
2. Heat up some warm soft flour tortillas, layer with thinly sliced strips of the Cilantro-Lime Steak, shredded iceberg lettuce, Salsa Fresca and top with shredded Monterey Jack cheese.
Salsa Fresca – adapted from Simply Scratch
  • 4 Roma Tomatoes, cheeks removed, sliced and diced small
  • 1 small red onion, diced small
  • 1 Serrano Pepper, diced finely (*I couldn’t find these, so I substituted two jalapenos)
  • 1 Clove of Garlic, smashed, peeled and minced
  • 3 green onions, white and dark green parts sliced
  • 1 handful of cilantro, chopped (*I love cilantro, so I always use more)
  • Juice of a half a Lime (*I used the whole lime)
  • 1/2 tablespoon of Olive Oil
  • A pinch of Kosher Salt
  • A few grinds of Black Pepper
Directions:
Combine all ingredients into a large bowl. Toss until all ingredients are mixed. Cover with plastic wrap and refrigerate for at least 30 minutes. Serve with tortilla chips or on top of your favorite tacos.

Buffalo Wings

I have never made wings before, so what better time to make them than for Super Bowl Sunday?? It wasn’t the easiest task to prep the wings, but now that I know where to cut it should be much easier next time. I like this method of cooking the wings, because I’m not a big fan of frying – I enjoy eating fried foods, just not being the one responsible for not burning the house down 😉 The steaming renders off a good amount of fat so that when they roast in the oven, there is far less steam and mess to deal with later. It’s actually slightly healthier, too – especially when compared to deep frying. We will soon see if the extra effort and my cautious nature pays off. I have a new 5 quart stainless steel pot that has a steamer insert in it and was able to cook the wings in two small batches. The insert in so much easier to clean than those small, collapsible steamer baskets.

Verdict: These were so good, I wished I bought the party pack! I used Frank’s Red Hot, which has the perfect combination of flavor and heat and the minced garlic gives it a little something extra. These aren’t difficult to prepare, and the only part I didn’t like about making them is dividing the wings. However, after tasting these I would make these again – they’re perfectly moist, tender, juicy and flavorful. The only thing that’s missing is the super crispy skin you get when you fry them. I’m so glad when a little extra effort goes a long way in flavor. Oh, I made a blue cheese dip for these too. It couldn’t be easier! I’ll post that below the wing recipe. Thanks for reading, enjoy!

Buffalo Wings – adapted from Alton Brown

  • 12 whole chicken wings
  • 3 ounces unsalted butter
  • 1 small clove garlic, minced
  • 1/4 cup hot sauce
  • 1/2 teaspoon kosher salt
Directions:

Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil.

Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.

Preheat the oven to 425 degrees F.

Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.

While the chicken is roasting, melt the butter in a small bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine.

Remove the wings from the oven and transfer to the bowl and toss with the sauce. Serve warm.

Super Easy Blue Cheese Dip –

  • crumbled blue cheese – as much or as little as you want
  • mayonnaise
  • sour cream
  • fresh cracked pepper

It couldn’t be easier – just add the amounts that you prefer. For about one cup of dip, I use at least 1/4 cup of crumbled blue cheese, 1/2 a cup of sour cream and 2 – 4 TBSP of mayonnaise, and lots of pepper to taste.

Chili Cheese Dogs

This turned out to be really tasty. I’m glad I took the time to make this instead of opening up a can of chili like I normally do. Those are always so full of salt and other preservatives…it kind of looks like dog food! The flavor and texture were so good, a little smokey, a nice kick and even a little sweet. We enjoyed this over nitrate/nitrite free all beef hot dogs and these homemade buns. The leftovers would be fantastic on top of fries, tater tots, or just with some cheese melted on top. Chili con Carne – adapted from Seasaltwithfood
  • 3 Tbsp Olive Oil
  • 3 Cloves Garlic, chopped
  • 1 Medium Yellow Onion, finely chopped
  • 1 pound ground beef
  • 1 tsp Dried Oregano (I used Mexican oregano)
  • 4 Tbsp Ancho Chili Powder (I used 2 TBSP Ancho, 2 TBSP Chili powder)
  • 1 tsp Cumin Powder
  • 1 can red kidney beans, rinsed and drained well
  • 1 – 14 ounce can diced tomatoes
  • 1 cup water
  • Sea Salt
  • Shredded Cheese
  • Chopped Cilantro
  • Sour Cream, optional

Directions –

Preheat oven to 350 degrees.

Heat the cast iron pot over a moderate heat. Add the oil, garlic, and onion and cook until golden, stirring occasionally, about 8 minutes.

Turn the heat on high, mix in the ground beef, oregano, chili powder, cumin, and stir until the beef mixture is deep red in color and the meat is no longer pink.

Add the beans, diced tomatoes, and water into the beef mixture. Bring it to a boil, switch off the heat and cover with a piece of parchment paper and then cover with the lid. Cook in the preheated oven for about 1 ½ hours and season with sea salt. Serve the chili with cheese, cilantro, and sour cream, if desired.
