Perfect Au Gratin Potatoes

augratin1

The name says it all – these really are perfect! They are the easiest potato side dish I have ever made and I’m finding new excuses to make them. We enjoyed these alongside this roast chicken and these garlicky green beans. The leftovers heat up nicely too – if there are any! Thanks for reading, enjoy 🙂

Perfect Potatoes Au Gratin – adapted from The Pioneer Woman

  • 4 whole Russet Potatoes, Scrubbed Clean
  • 2 Tablespoons Butter, Softened
  • 1-1/2 cup Heavy Cream
  • 1/2 cup Whole Milk
  • 2 Tablespoons Flour
  • 4 cloves Garlic, Finely Minced
  • 1 teaspoon Salt
  • freshly Ground Pepper, to taste
  • fresh thyme to taste (my addition…so yummy)
  • 1 cup shredded cheddar cheese

Directions –

Preheat oven to 400 degrees.

Smear softened butter all over the bottom of a baking dish.

Slice potatoes, then cut slices into fourths.

In a separate bowl, whisk together cream, milk, flour, minced garlic, salt, and plenty of freshly ground black pepper.

Place 1/3 of the potatoes in the bottom of the baking dish. Pour 1/3 of the cream mixture over the potatoes.

Repeat this two more times, ending with the cream mixture. Cover with foil and bake for 30 minutes. Remove foil and bake for 20 minutes, or until potatoes are golden brown and really bubbling. Add grated cheese to the top of the potatoes and bake for 3 to 5 more minutes, until cheese is melted and bubbly.

PW’s Spicy Beans

My sister visited this summer – and while that was awesome, she made it even more memorable by making these amazing beans! This will forever be my go-to recipe for pinto beans and the whole family enjoys them – so much that I made them three times in one month. Don’t let the “spicy” deter you, these are easily modified. Two teaspoons of pepper is too much for our palettes, so I only add 1 or 1 1/2 teaspoons. Thanks for reading, enjoy!

Spicy Beans – adapted from The Pioneer Woman

  • 4 cups Dry Pinto Beans
  • 1 whole Ham Hock
  • 2 quarts of water (this is the perfect amount for me)
  • 1 whole Onion, Diced
  • 4 cloves Garlic, Minced
  • 2 whole Jalapenos, Sliced
  • 2 teaspoons Salt, More To Taste
  • 2 Tablespoons Chili Powder
  • 1 – 1 1/2  teaspoons Black Pepper

Directions –

Sort through the beans, making sure to pick out all the weird looking and broken beans and rocks. Dump the sorted beans in a large colander and rinse thoroughly with cold water.

Place beans in a stock pot with the ham hock and cover with water by 2 inches. Bring to a boil, then reduce to a simmer. Cover the pot and simmer for 2 hours, checking occasionally to make sure the water level is fine. Add more water as needed.

Then throw in diced onion, red bell pepper, garlic and jalapeno. Cover and continue cooking for another hour or two, remembering to check the water level.

Add salt, chili powder (if desired) and pepper, then cover and cook for another 20 to 30 minutes, or until beans are lovely and tender.

Garlic Green Beans

Quick Post: These were so good, (so was the entire meal – roast chicken and garlic rice pilaf linkage). This is such an easy, amazingly flavorful meal and definitely company worthy (not to mention cheap!) It hits all the right buttons! Thanks for reading, enjoy 🙂

Garlic Green Beans – adapted from A Sweet Pea Chef

  • 1 lb. fresh green beans, stems removed
  • 2 tbsp. unsalted butter (**next time, I’ll use 1 TBSP**)
  • 2 cloves garlic, minced
  • 1/2 tsp. kosher salt
  • 1/8 tsp. ground black pepper

Directions:

Steam green beans until slightly tender, about 6-8 minutes.

Melt butter over medium heat in a large skillet. Add garlic and cook 1-2 minutes. Transfer steamed green beans to the melted butter and garlic. Toss to coat green beans evenly and continue to saute for approximately 5 minutes over medium heat.

Panera Mac and Cheese

This is so rich and creamy! The kids loved the mild flavor of the cheeses and already mentioned wanting to eat the leftovers. Hopefully my picky husband will appreciate it – he’s hard to please when it comes to new macaroni and cheese recipes. His absolute favorite is this one, and no other recipe I have tried can hold a candle to it in his opinion!

His verdict: 7 out of 10! I’ll take it – besides, he ate two bowls and happily brought some to work the next day. Thanks for reading, enjoy!

Panera’s Stove Top Mac and Cheese – adapted from Annie’s Eats via Panera Bread

  • 16 oz shell pasta
  • 4 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 1/2 cups milk, heavy cream, or half-and-half
  • 4 oz white American cheese, chopped or torn into pieces
  • 8 oz extra sharp white Vermont cheddar, shredded
  • 2 tsp – 1 tbsp Dijon mustard (adjust according to your tastes)
  • 1 tsp Kosher salt
  • 1/4 tsp hot sauce (like Frank’s)
Directions:
1. In a large stockpot, cook pasta according to package directions.  Drain well.
2. While the pasta cooks, melt the butter in a 4-quart sauce pan over medium heat.  When the butter has melted and has started to bubble, whisk in the flour; cook for 1 1/2 minutes whisking constantly.  Gradually whisk in the milk until no lumps remain.  Reduce the heat to medium-low and cook milk mixture, whisking frequently, until it thickens and bubbles, about 8 minutes.
3. Remove sauce pan from the heat and by the handful, stir in the cheeses allowing all of the cheese to melt into the sauce before adding more.  Stir in the mustard, salt, and hot sauce.  Return the sauce pan to the heat and stir in the pasta.  Be sure to stir up the sauce from the bottom of the sauce pan and thoroughly coat all of the pasta with sauce.  Cook for 1-2 minutes over medium-low heat until heated through.  Serve hot in bowls with spoons.

Creamy Garlic Pasta

Quick Post: This was so yummy! I served it along side roast chicken and roasted potatoes. My picky five-year old liked it, so that was an added bonus; and my neighbor and her one year old son really liked it too. I will make this again and again because I’m a sucker for carbs, but also because it’s so quick, easy and flavorful. Thanks for reading, enjoy!

Creamy Garlic Pasta – adapted from The Cheese Pusher

  • 2 tsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • ¼  tsp salt
  • ½ tsp pepper
  • 3 cups chicken stock or broth
  • ½ lb angel hair pasta
  • 1 cup grated parmesan cheese
  • Âľ cup heavy cream (*I used half and half)
  • 2 tbsp chopped fresh parsley
Directions:

In a pot, bring the olive oil to medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Mix in the butter until melted. Add the salt, pepper and chicken stock. Raise the heat to high and let it come to a boil.

Once it is at a rolling boil, add the pasta and cook for as long as the box’s directions indicate. Reduce the stove to medium heat and mix in the parmesan until completely melted. Turn off the heat and stir in the cream and parsley. Serve immediately.

Doctored-Up Black Beans

Quick Post: I wanted a healthy side for these steak tacos. They’re simple, quick and tasty; not to mention healthy. Even my picky husband who doesn’t like black beans ate some and my son really enjoyed them.  I ate the leftovers served over baked brown rice and topped with a dollop of avocado dressing and some crumbled feta. Thanks for reading, enjoy!

Black Beans –

  • 2 cans black beans, drained and rinsed really well
  • 2 TBSP olive oil
  • 1 small onion, diced
  • 6 mini bell peppers, diced (or one large pepper)
  • 1 small jalapeno, seeded and diced
  • 1 clove garlic, minced
  • 1 tsp. cumin
  • kosher salt and pepper to taste
  • lime juice
  • cilantro leaves
Directions:
1. In a medium sauce pan, heat a tablespoon of olive oil over medium-low heat. Add the chopped onion, bell pepper, and garlic and saute until softened. Add the drained and rinsed beans to the pot and smash some with your spoon. Season with cumin, salt and pepper and pour about 1/2 a cup of water over all to thin out the beans slightly. Cook for about 5 to 7 minutes and add your cilantro leaves – taste for seasoning. Serve with a lime wedge and feta (or cojita) cheese. Enjoy!

Garlic Rice Pilaf

Yum – this was a perfect accompaniment to our salmon dinner tonight. I like the fact that I don’t have to babysit this at the stove trying to split time up between it and the main course. It baked away in the oven while I prepped the salmon and broccoli; but this rice takes over an hour to bake. I needed to start this about 40 minutes before I could cook the broccoli and salmon, but it worked out well because once the rice was about 20 minutes to completion, I placed the salmon on the bottom rack of the oven. The flavor was garlicky and nutty with a hint of the lemon. I added shallot to this and lemon zest to up the flavor and added about a half tablespoon more butter. This will definitely be in our rotation! Thanks for reading, enjoy!

Garlic Rice Pilaf – adapted from Annie’s Eats

  • 2 1/2 tbsp. butter
  • 3 cloves garlic, minced or pressed
  • 1 medium shallot, minced
  • 1 cup long-grain white rice
  • 2½ cups chicken broth, divided
  • ½ tsp. salt
  • ½ tsp. pepper
  • Lemon zest
  • Squeeze of lemon juice

Directions:

Preheat the oven to 375° F.  Have ready a covered casserole dish (*I don’t own a covered dish that was small enough, but foil worked just fine*).  In a saucepan or skillet, melt 2 tablespoons butter over medium-high heat.  Add the garlic, shallot and rice to the pan and cook until both are golden brown, about 3-4 minutes.  Stir in 1 cup of the chicken broth, salt and pepper and bring to a boil.  Pour the mixture into the casserole dish, cover, and bake for 25 minutes.  Stir in the remaining 1½ cups chicken broth, lemon zest and 1/2 tablespoon of butter and bake, covered, for another 45 minutes.  About 15 minutes before it is finished baking, stir in a squeeze of fresh lemon juice.

Note: This recipe can be doubled without increasing the baking time.

Cheesy Orzo

Quick Post: I really enjoyed this and I seem to have a thing for orzo pasta side dishes when I need something to go along with fish. I modified this more than I usually do for a first attempt with the addition of peas and lemon zest. Thanks for reading, enjoy!

Cheesy Orzo – adapted from Food Network

  • 2 tablespoons unsalted butter
  • 1/2 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 box of vegetable stock
  • 2 cups orzo pasta
  • 1/2 cup grated Parmigiano or Romano
  • 1 cup frozen peas
  • the zest of half a lemon
  • Salt and freshly ground black pepper to taste
Direction:

Preheat a 8 inch pot with a tight fitting cover over moderate heat. Add butter, onion and garlic and saute for 2 or 3 minutes. Add broth to the pan and bring to a boil. Stir in orzo and return broth to a boil. Cover pot and reduce heat to simmer. Cook for 10 – 15 minutes, stirring occasionally, or until liquid is absorbed and pasta tender. Remove lid and stir in frozen peas and cheese. Season with salt, pepper, and lemon zest. You favorite fresh herbs may also be stirred into the orzo or rice to strengthen the flavor even more.

Baked Beans

We had some friends over this weekend and what’s easier than hamburgers for the adults and hot dogs for the kids? We were in charge of those and they were in charge of some sides – but then I remembered this recipe for baked beans. M loves these and they are so easy to throw together. I made a half recipe’s worth of them or else we’d have over four pounds of these to eat up! It made the perfect amount and our friends were happy to take some home with them. Because of the scaled down amount, they only took about 40 minutes and it all fit nicely in a 11×7 inch baking dish. Having all that length is ideal so there is lots of space for the bacon and fried onion topping (yum!). The addition of crushed pineapple sounds weird but totally works in these – so unless you’re allergic or hate pineapple don’t leave it out. It’s also important to find a really good barbecue sauce and I have discovered Stubb’s recently and what I love is that I can read all the ingredients. Thanks for reading, enjoy!

Baked Beans –

  • 4 – 16 ounce cans of baked beans
  • 1 -20 ounce can of crushed pineapple, drained
  • 1 cup good BBQ sauce
  • 1 cup molasses
  • 2 TBSP yellow or brown mustard
  • 6 ounces of French’s fried onions
  • 5 strips of bacon, cooked and crumbled
  • salt and pepper to taste
Directions –
Preheat oven to 350 degrees.
In large bowl mix together beans, pineapple, molasses, BBQ sauce, mustard, 1/4 of the bacon and 1/4 of the onions. Season with salt and pepper to taste. Pour beans in a 13×9 inch baking dish and sprinkle with remaining bacon and onions. Cook in oven for 1 hour or until the beans are brown and bubbly. Serve warm.
