Shrimp Pasta with Oven Dried Tomatoes

Quick Post: This pasta was amazing! I have tried and posted several shrimp pastas here, and this one is sure to be a repeat offender in this house. This was my first time using mascarpone cheese – it’s like butta! It created a smooth and creamy sauce that perfectly complimented the rest of the flavors in this dish. I really like the oven dried tomatoes, because all that richness would be overpowering if not for the presence of the slightly acidic, sweetness of them. They’re worth making, especially if you want to avoid preservatives of most store-bought sun dried tomatoes. The kids were leery of them, but I explained that they’re like tomato-raisins 😉 Thanks for reading, enjoy!

Shrimp Pasta with Oven Dried Tomatoes – adapted from Annie’s Eats

  • 1 pint cherry or grape tomatoes, halved
  • Olive oil
  • Small pinch of sugar
  • Kosher salt and pepper
  • 1 lb. bowtie pasta
  • 2 tbsp. unsalted butter, divided
  • 1 lb. medium shrimp, peeled and deveined
  • ¾ cup chopped yellow onion
  • 3 cloves garlic, minced
  • ½ tsp. red pepper flakes
  • ½ cup dry white wine (or chicken broth)
  • 6 oz. mascarpone cheese
  • ½ cup fresh basil leaves, chopped (*I forgot to buy this*)
  • ¼ cup grated Parmesan, plus more for serving

Directions:
To make the oven dried tomatoes, preheat the oven to 225˚ F. Place the tomatoes in a small baking dish in a single layer, cut side facing up. Drizzle lightly with olive oil and season with a pinch of sugar, salt and pepper. Bake for about 3 hours, or until the tomatoes are mostly shriveled up. Refrigerate until ready to use.

Bring a large pot of salted water to boil. Once boiling, cook the pasta according to the package directions. Drain well.

While the pasta is cooking, melt 1 tablespoon of the butter in a large saucepan over medium-high heat. Add the shrimp to the pan and cook in a single layer, flipping once during cooking, just until opaque, about 2-3 minutes. Remove to a plate, tent loosely with foil and set aside. Melt the remaining tablespoon of butter in the pan. Sauté the onion until slightly softened, about 4-5 minutes. Add the garlic and red pepper flakes to the pan and sauté just until fragrant, about 30 seconds. Add the wine or broth and scrape any browned bits from the bottom of the pan.

Reduce the heat to medium-low. Return the shrimp to the pan and add in the drained pasta along with the oven-dried tomatoes. Add the mascarpone to the pan and stir until completely melted. Stir in the basil and Parmesan, and season with salt and pepper to taste. Serve immediately with additional Parmesan as desired.

Chicken Gyros

Chicken Gyros – adapted from The Girl Who Ate Everything

Tzatziki sauce:

  • 1 cup plain Greek yogurt
  • 1 regular cucumber, peeled and seeded
  • 1 teaspoon minced garlic
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon dried parsley
  • 1 teaspoon white wine vinegar
  • Salt and pepper
  • Squeeze of fresh lemon juice, and zest
  • Extra virgin olive oil

For the chicken:

  • 2 teaspoons minced garlic
  • Juice of 1 lemon (2-3 Tablespoons)
  • 2 teaspoons red wine vinegar
  • 2 Tablespoons extra virgin olive oil
  • 2 heaping Tablespoons plain Greek yogurt
  • 1 Tablespoon dried oregano
  • 1 teaspoon dried dill
  • Salt and pepper
  • 1 1/4 lbs. boneless, skinless chicken breasts

To assemble:

  • Pita bread (I made these again)
  • Fresh tomatoes, seeded and diced

Directions –

Shred the cucumber or chop in food processor. Wrap in a towel a squeeze to remove as much water as possible. Mix together the yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil.

Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour.

Cook the chicken as desired, either in the skillet or with the broiler. Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes. Cut into strips. Heat pitas. Top with chicken, tzatziki sauce, diced tomatoes and sliced onions. Serve immediately.

Miracle Mac n’ Cheese

It was getting closer and closer to dinner time, but I had no idea what to make. My girl and I flipped through Pintrest and came across this recipe and she said I should make it 🙂 This mac n’ cheese is so easy, you don’t have anymore excuses to buy boxed stuff, and if you can boil water, you can make this tasty macaroni and cheese! It’s pretty neat how cooking the noodles in milk makes all the difference. My daughter (aka. The Picky One) ate two servings of this – that is a very rare occurrence in this house. Miracle Macaroni and Cheese – heavily adapted from Budget Bytes

  • 4 1/2 cups milk
  • 1 pound elbow macaroni pasta
  • 2 cups shredded cheddar cheese ( I used sharp white cheddar)
  • 1 teaspoon dry mustard powder
  • 1/2 teaspoon Salt, More To Taste
  • 1/2 teaspoon Seasoned Salt, More To Taste
  • 1/2 teaspoon Ground Black Pepper
  • 1/8 teaspoon Cayenne Pepper
  • 1/4 teaspoon paprika

Directions –

Combine the dry macaroni and 4 cups of milk in a medium pot. Place a lid on top and bring it up to a boil over medium/high heat while occasionally stirring. As soon as it reaches a boil, reduce the heat to low and let simmer until the pasta is tender (about 10-15 minutes). Make sure to stir often during this process to keep the pasta from clumping or sticking to the bottom of the pot. Promptly replace the lid each time to help hold in the moisture. Once the pasta is soft and has absorbed most of the milk, season with salts, pepper, paprika, and dry mustard, or the spices of your choice. If the mixture begins to look dry, add the remaining 1/2 cup of milk. Turn the heat off and stir in the shredded cheese. Serve immediately.

French Bread Pizzas

French Bread – adapted from The Galley Gourmet 

  • 3 cups bread flour (381 grams)
  • 1 Tablespoon dry active yeast
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon olive oil
  • 1 1/4 cups warm water
  • 1 1/2 teaspoons kosher salt
Directions –
In a stand mixer fitted with a dough hook, combine the flour, yeast, sugar, olive oil, and water.  Mix on low speed until a dough forms and pulls away from the sides of the bowl.  Add the salt and increase the speed to medium; knead for 10 minutes.  Turn the dough out onto a lightly floured surface and form it into a ball.  Lightly grease the inside of the mixing bowl and return the dough to the bowl.  Cover with plastic wrap and set in a warm, draft-free space to rise for 1 1/2 hours, or until doubled in size.
Turn the dough out onto a lightly floured surface and gently deflate the dough.  Divide the dough in half and form into balls.  Cover with a clean kitchen towel and allow them to rest for 15 minutes.  Form each ball into a 16 x 2 inch loaf.  Place the loaves onto a large parchment lined baking sheet, cover with a damp cloth, and set aside in a draft-free space to rise for 1 1/2 hours.
Preheat the oven to 375º F.  Bake the loaves until golden brown, about 30 minutes.  Transfer to racks to cool completely.  Slice and serve at room temperature or rewarm before serving.  Enjoy!
French Bread Pizzas – adapted from Budget Bytes 
  • 2 loaves of French bread
  • 1-2 cups marinara sauce
  • 8 ounces mozzarella cheese
  • pepperoni chopped
  • dried oregano for sprinkling over the top, optional
  • Parmesano Reggiano and other Italian cheeses for grating over top, optional
Directions-
Preheat your oven to 400 degrees and line a baking sheet with foil. Cut your baguette into the size you want your pizzas. I had a half length baguette so I cut it in half (lengthwise) then sliced it open to make four pieces, each about 8 inches long and four inches wide.Top each pizza with about 1/4 cup of sauce and 1/4 cup of shredded cheese. I like to sprinkle on a little extra Italian spices at this point to kick up the flavor. Follow this up with pepperoni or whatever other toppings you are using. Bake the pizzas in the oven at 400 degrees for 10 to 15 minutes or until the cheese is melted and bubbly and the edges of your bread are brown and crispy.
Greek Dressing –  adapted from Center Cut Cook
  • 1/4 cup + 2 TBSP extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 3/4 tsp pepper
  • juice of 1/2 a lemon
  • 1/2 tsp salt
  • 3/4 tsp onion powder
  • 1 tsp Dijon mustard

Directions –

Mix all ingredients in a glass jar, shake and place in the refrigerator for at least 30 minutes before using.

Crispy Fish in Flatbread

Quick Post: This meal was a hit! My picky daughter went as far as to call this “brilliant” (a word I have never heard her use – but I appreciated it), and asked if I could make this again for Thanksgiving!  She’s six, so I let that slide 😉 I will post the flat bread recipe I used for this soon – that one is a keeper, too! Crispy Fish in Flatbread – adapted from No More To Go

For the Fish –

  • 1 pound tilapia fillets – split
  • Blackening seasoning to taste
  • Kosher salt, to taste
  • 1 cup Panko bread crumbs
  • 1 egg, plus 1 TBSP water
  • 1/2 cup cornstarch
  • Peanut oil, canola oil or a combination of the two

For the Tartar Sauce – Mom Makes Original 

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 2-3 TBSP sweet dill pickle relish
  • 1 tsp Dijon mustard
  • 1/2 tsp true garlic powder
  • 1 tsp white wine vinegar
  • 1 tsp of lemon juice
  • 1/2 tsp of lemon zest
  • 1/2 tsp dried parsley
  • 1/2 tsp dried chives
  • salt and pepper to taste

Directions –

1. Prepare the sauce by combining all ingredients in a small bowl. Refrigerate.
2. In small shallow dish (pie plate), lightly beat egg with 1 tablespoon water. In another dish, pour in panko and in another dish, the cornstarch.
3. Season the tilapia with the blackening seasoning and salt, then lightly coat the fish with cornstarch – gently pat the fish to remove excess.
4. Dip the tilapia into the egg mixture, and then place the fish in the panko, making sure the piece is evenly coated. Set aside onto a clean plate and continue with the rest of the fish pieces.
5. In a heavy skillet, add enough oil to come up the sides 1/8-1/4” inch. Heat the oil over medium high heat until it shimmers. Test the oil by dropping a little panko in the pan. The oil is hot enough bubbles form around the panko.
10. Without overcrowding the pan, fry the fillet until golden, flipping once. Depending on the thickness of the fillets, these will cook in just a few minutes.
11. To serve, spread tartar on a flatbread, arrange tilapia, and other toppings of your choice.

Macaroni (1870)

This macaroni and cheese is all about the cheese – duh, right? Quality is super important, so splurge  a little and do not use pre-shredded cheese!  This is quicker than other recipes I have tried and it’s great if you have less than a full box of pasta in your pantry (my box weighed 9.9 ounces) and remnant cheeses in your fridge. I used smoked gouda and some other chunk that might have been Emmentaler? Next time I will use a sharp English cheddar, although the kids might not appreciate it. The cheese sauce is much more “soupy” than other recipes that are thickened with a roux, but the longer it sits and cools the thicker it becomes. Thanks for reading, enjoy!

Macaroni (1870) – adapted from Kitchen Historic

  • 10 ounces macaroni
  • 2 cups whole milk
  • 4 tablespoons flour
  • 4 tablespoons butter
  • 2/3 cup cream
  • 1 teaspoon mustard powder
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • cayenne, to taste
  • 8 ounces old cheddar, grated
Directions:

1. Set a large pot of water to boil and cook the macaroni until tender. Strain the water and return the macaroni to the pot.
2. While the macaroni is cooking, mix the milk, flour, and butter in a medium saucepan. Stir until combined and butter has melted.
3. To the sauce, add the cream, mustard, salt, pepper, cayenne, and cheese. Mix together and simmer for ~5 minutes or until thickened.
4. Add finished sauce to macaroni and stir, cooking until evenly heated.

Stir Fry

This was really good and my whole family enjoyed this meal. Next time I will add some honey or more orange juice for a little more sweetness, because the savory flavors were pretty strong. I like my flavors to have a little more balance, but other than that this is definitely a winner. Even my kids wondered if I’ll make this again! I can’t beat that kind of enthusiasm, especially when it has so many veggies in it. I will add more veggies next time and the fam requested baby carrots, and I missed the crispy crunch of water chestnuts. M doesn’t care for those, but he can pick them out; which means more for me 😉 Thanks for reading, enjoy!
Pat’s Broccoli and Chicken Stir-Fry – adapted from Food Network
  • 2 tablespoons soy sauce
  • 1 tablespoon orange juice
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon light brown sugar
  • 1/2 tablespoon sesame oil
  • 1/2 tablespoon red pepper flakes, plus more to taste, if desired
  • 1/2 tablespoon cornstarch
  • 1 tablespoon peanut oil, plus more as needed
  • 1 pound boneless, skinless chicken thighs, cut into 1/2-inch pieces
  • 4 cloves garlic, minced
  • 2 tablespoons peeled and chopped ginger
  • 1 cup snap peas, rinsed and blanched
  • 1 cup bell pepper, sliced and blanched
  • 1 medium carrot, peeled and sliced at an angle – thin, blanched
  • 2 cups broccoli florets, blanched

Directions:

In a small bowl, whisk together the soy sauce, orange juice, rice wine vinegar, light brown sugar, sesame oil, red pepper flakes and cornstarch. Reserve.

Set a wok over medium-high heat and coat with 1 tablespoon of peanut oil. When the oil shimmers, add about half of the chicken thigh pieces. Stir-fry until the chicken is fully cooked through, about 3 to 4 minutes. Transfer to a plate and repeat the process with the remaining chicken thighs.

Add enough peanut oil to the hot wok to coat the bottom. Add the garlic, ginger, green onions, and red pepper flakes, to taste, and saute until fragrant, about 1 minute. Add chicken back to the pan along with the broccoli florets and stir to warm through. Pour in the reserved sauce and stir until the sauce is thickened and bubbly, about 45 seconds. Transfer to a serving bowl and serve.

Shrimp Fettuccine Alfredo

Quick Post: Yet another new recipe find thanks to Pinterest! I love meals that are restaurant quality at a fraction of the cost, especially when there are no fancy ingredients required. My family loves shrimp as you can see from past posts, and this is another dinner to go in the rotation. It’s definitely not something I would make all that often, though! Butter, heavy cream and lots of cheese, plus carbs? Yes, please! I had a partial stick of butter with 5 tablespoons left and I used a combination of half and half and heavy cream. I know I probably didn’t save many calories and fat, but it was the thought that counts, right? 😉 Thanks for reading, enjoy!
Shrimp Fettuccine Alfredo – adapted from The Candid Appetite
    • 1 pound dried or fresh Fettuccine
    • 6 tablespoons unsalted butter
    • 1 shallot, minced
    • 3 cloves of garlic, minced
    • 1/2 teaspoon red pepper
    • 1 1/2 pounds shrimp, peeled and deveined
    • 1 cup heavy cream
    • 1 cup finely grated Parmigiano-Reggiano
    • kosher salt, to taste
    • freshly ground black pepper, to taste
    • Fresh Basil, sliced

Directions –

Cook the fettuccine in a pot of rapidly boiling salted water until al dente. Drain in a colander, reserving 1 cup of the pasta cooking liquid.

While the pasta is cooking, melt the butter in a medium pan over medium-high heat. Add shallots, garlic and pepper flakes and saute until tender. Add the shrimp, in a single layer and allow to cook on the first side for 3-4 minutes. Or until the edges turn pink. Give them a flip and continue to cook for 1-2 minutes. Once cooked transfer to a platter or plate, and allow to rest while you finish the sauce. Add heavy cream to the pan and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat.

Return the pasta to the pot it was cooked in, set over medium-high heat along with some of the reserved cooking liquid. Add the butter-cream mixture, half of the Parmesan, the cooked shrimp and toss to combine thoroughly. Season with salt and pepper, to taste. Sprinkle with remaining parmesan, and basil. Serve immediately. Enjoy.

Meaty Meat Sauce (aka Man Pasta)

I tweaked The Pioneer Woman’s recipe just a little to use what we had here and to enhance the flavor. I tried this once a couple of years ago and I remember that M really enjoyed it because he’s not much of a tomato sauce fan. He is a big meat fan of course, so this one made it to repeat status. I like the addition of Italian sausage and I get mine from a local specialty food store. They make their own sausages and these are so much better than any brand I have tried. Pair this simple sauce with a hearty pasta shape, serve with garlic bread and if you’re feeling a little guilty – a green salad. You can’t go wrong with this dinner, and the men in your life will thank you 🙂

Pasta alla Marlboro Man – adapted from The Pioneer Woman

  • 2 Tablespoons Olive Oil
  • 1/2 whole Large Onion, Diced
  • 2 cloves Garlic, Minced
  • 1 pound ground beef
  • 1 pound Italian sausage (I used a combination of hot and mild)
  • Salt To Taste
  • Freshly Ground Black Pepper, To Taste
  • 1 teaspoon (generous) Ground Thyme
  • 1 28 ounce can San Marzano whole, peeled tomatoes
  • 1 8 ounce can no salt tomato sauce
  • 1/4 cup Freshly Grated Parmesan Cheese
  • 1 – 1 1/2 pounds Rigatoni

Directions –

Heat olive oil in large skillet or pot over medium-low heat. Add onion and cook a couple of minutes, until starting to turn translucent. Add garlic and stir, cooking 1 minute, making sure not to brown the garlic.

Add ground beef and cook until brown. Drain most of excess fat. Add salt, pepper, and ground thyme. Stir to combine. Dump in canned tomatoes with their juice, and tomato sauce. Stir, reduce heat to low, and cover pot. Cook for 30 minutes, stirring a couple of times. Uncover the pot and cook an additional 30 minutes.

Cook rigatoni according to package directions—don’t overcook! Drain and pour over top the meat sauce. Cook and combine over low heat.  Stir in 1/4 to 1/2 cup grated Parmesan into the sauce. Check and adjust seasonings.

Spicy Sausage and Lentil Soup

Sometimes I base my dinner choices on what the weather will be like at night. We finally got our first cold snap here, and I was more than willing to take advantage of it. I love hearty soups and comforting main dishes like roasted chicken, pot pies and pot roasts on nights like these. What better way to warm your tummy than with something spicy, but not too heavy. I paired the soup with Parker House rolls for dipping, but a nice green salad would be a great accompaniment, too – but I was going for comfort here 😉 Thanks for reading, enjoy!
Spicy Sausage and Lentil Soup –
  • 1 pound lentils, picked through and rinsed well
  • 2 tablespoons olive oil
  • 1 lb ground Italian sausage (I used 2 links hot, 2 links mild)
  • 1 medium onion, diced
  • 3 stalks diced celery
  • 3 carrots, diced
  • 2 or 3 cloves garlic, minced
  • Kosher salt and fresh ground pepper, to taste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • a few sprigs fresh thyme, or 1 tsp dried
  • 4 cups chicken stock
  • 2 cups vegetable stock (because I had some left over, you can use all stock or broth, if you’d prefer)
  • hot water if needed
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • grated Parmesan

Directions –

In a 6 quart dutch oven over medium heat, heat the olive oil and add in the Italian sausage. Brown the sausage until it is cooked through. Drain and set aside. In the same pot, add in the onions, celery, carrots, garlic, herbs and spices, cook for about 10 minutes, stirring often. Add the chicken stock, vegetable stock, water (if needed), canned tomatoes, sausage, and drained lentils, cover, and bring to a boil. Reduce the heat to low and simmer covered for 45 to 60 minutes, or until the lentils are cooked through and tender, stirring occasionally. Add water as needed to adjust the consistency of the soup. Check the seasonings – add more salt and pepper to taste. Serve sprinkled with grated Parmesan.
