Buffalo Chicken Pizza

My sister shared this simple and satisfying recipe while we were vacationing in California. We made four awesome pizzas together and this one was the standout! We used leftover pollo asada that Dad marinated and grilled the day before. Not even he knows what he threw together for it, so I improvised a super simple marinade for my chicken. Β I will make this again next week for company – I hope they love it πŸ™‚ Thanks for reading, enjoy!

Buffalo Chicken Pizza –Β 

For Marinade –

  • 1 pound boneless, skinless chicken breast
  • 1 tsp. sweet paprika
  • 1/4 tsp. cayenne
  • grapseed oil
  • juice of one lemon

Mix all ingredients together and pour over chicken breast. Let marinade for at least 1 hour. Cook chicken using your preferred method – we grilled ours. This is more than enough chicken for one pizza. (I used the leftover chicken for buffalo chicken salad)

For Pizza – adapted from Punky Purls

  • 1 ball of pizza dough – at least 14 ounces
  • 1 1/2 cup of cooked and shredded chicken
  • 1 cup shredded mozzarella cheese
  • blue cheese crumbles to taste
  • 2 – 3 TBSP Franks Red Hot
  • 2 TBSP butter

Directions –Β 

Preheat oven to 475 degrees and place a pizza stone on top of a rack set at the bottom of your oven.

Place a skillet over medium heat; add the butter and Frank’s Red Hot. Heat just until butter has melted, then add chicken and coat with buffalo sauce. Turn off heat and set aside. Press dough out into a pizza round about 13 inches in diameter and then dock center of pizza dough. With a slotted spoon remove chicken from skillet and place on pizza dough, making sure you don’t coat the bottom in a thick layer of sauce; unless you like soggy pizza πŸ˜‰ Generously cover the chicken with your cheese. Bake for 8-10 minutes or until crust and cheese are golden brown. Serve and enjoy!

Copycat Panera Chewy Chocolate Chip Cookies

I haven’t had any cookies other than homemade for quite some time now, but I make the exception for Panera’s chocolate chip cookies. They are huge and too hard to pass up, especially when the kid at the register asks me if I would like to add one to my order for 99 cents! They are my weakness along with the adult grilled cheese sandwich and the creamy tomato soup!

What did we ever do before Pinterest?? Seriously, I have collected some gems in the past year that I would probably not find if not for the convenient and genius site that is Pinterest! I just stumbled upon this recipe last night and made them today. These are the biggest cookies I have made to date, but there is really no way around the 1/4 cup serving πŸ˜‰

Verdict: Wow – perfection! I will make these again. I baked off six – for quality control sake, of course πŸ˜‰ Slightly crispy edges and chewy middles with plenty of sticky, sweet flavor from the dark brown sugar. One is more than enough for this lady! πŸ˜‰ Thanks for reading, enjoy!

*TIP: If you’re like me and you only buy light brown sugar, you can add one tablespoon of molasses per one cup of packed light brown sugar. Not to worry if you only have white sugar on hand; add 1/4 cup of molasses to one cup of white sugar.

*TIP:Β I use a disher to portion out the dough onto my cookie sheet, and then I use a fork to scrape the dome off the tops of each to flatten. They bake up as pictured – thanks to all the commenters! I hope this helps.

Copycat Panera Chewy Chocolate Chip Cookies – adapted from The Pinning Mama

  • 1 c butter, softened
  • 1/2 c shortening
  • 1 1/2 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 4 teaspoon vanilla extract
  • 4 1/3 cup all-purpose flour (541 grams)
  • 2 tablespoon cornstarch
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 – 12 ounce bag mini semi-sweet chocolate chips

Directions –

  1. Mix butter, shortening and sugars until light and fluffy.
  2. Add egg and vanilla and mix until well combined.
  3. Combine flour, cornstarch, baking soda, and salt and mix together.
  4. Mix dry ingredients slowly into wet ingredients and blend well.
  5. If the dough is crumbly, stir in water 1 teaspoon at a time until it just holds together. The dough should not be sticky.
  6. Add in chocolate chips and stir until evenly distributed.
  7. Using ΒΌ cup measure, scoop out dough and form into a ball. Continue until all dough is balled. Approx 24 cookies.
  8. Place dough in the freezer for 2 hours or up to 3 months.
  9. Place frozen cookie onto parchment lined baking sheet and bake at 350 degrees F for 15 min.
  10. Let cool 2 minutes.

Tequila Lime Chicken

Sorry for the radio silence! We recently came back home from our two-week long trip to California. I am really glad to be home again and I’m sure my kitchen missed me as much as I missed it. My husband sustained himself on one meal a day (not home cooked), and these goodies that I made for him before I left! What would he do without me? πŸ˜‰ Since I’ve been back home, I have tried several new and successful recipes which I will share with you in the next few weeks.

Anyway, on to the recipe! This marinade gives the chicken amazing flavor and it’s a new family favorite. I used chicken thighs and served these tacos with pico de gallo, my fave Mexican rice and refried (in bacon grease!)Β pinto beans with lots of Monterey Jack cheese. I will make this again and again! Tequila Lime Chicken – adapted from The Pioneer Woman

  • 2 limes
  • 1/2 cup tequila
  • 1/4 cup olive oil (*I used grapeseed*)
  • 1 teaspoon kosher salt
  • 3 cloves garlic
  • 1 jalapeno, seeded and sliced
  • 1/2 bunch chopped fresh cilantro
  • 6-8 boneless, skinless chicken thighs (*If you have a few more pieces, this makes plenty of marinade*)
  • Corn tortillas
  • Monterey jack cheese
  • pico de gallo

Directions –

Slice open the limes and squeeze the juice into a food processor or blender. Add the tequila, olive oil, salt, garlic, jalapenos and cilantro. Blend the mixture until totally combined. Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.

Remove the chicken from the bag and grill it over medium-high heat. Rotate the chicken 45-degrees on both sides to create nice grill marks, and continue grilling until the chicken is cooked through, 4 to 5 minutes per side. Serve with corn tortillas, fresh pico de gallo, beans and rice.

Sweet and Sour Chicken

I have made this twice in two weeks! My picky daughter loves this dinner and can't get enough of the peppers and pineapple πŸ™‚ This is a fairly guilt-free take-out fake-out meal when you consider that Chinese restaurants bread and then deep fry their chicken, this is stir fried instead. Chinese Sweet and Sour Chicken – adapted from Steamy Kitchen via The Shiksa

  • 1 egg white
  • 2 tsp cornstarch
  • 1/2 tsp salt, divided
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch chunks
  • 1 can (8 to 10 oz) pineapple chunks in juice (reserve the juice)
  • 1 tsp fresh grated ginger
  • 1/4 cup white vinegar
  • 1/4 cup ketchup
  • 2-3 tbsp brown sugar
  • 1-2 pinches cayenne pepper (or more to taste– spicy!)
  • 2 tbsp high heat cooking oil, divded (ex. grapeseed, peanut oil)
  • 1 red bell pepper, seeded and cut into 1-inch chunks
  • 1 yellow bell pepper, seeded and cut into 1-inch chunks

Directions – 

    In a bowl, whisk together the egg white, cornstarch, and 1/4 tsp of the salt. Add the chicken pieces and stir to coat evenly. Let sit for 15 minutes at room temperature or up to overnight in the refrigerator.

    Meanwhile, whisk together 1/4 cup of the reserved pineapple juice, ginger, vinegar, ketchup, brown sugar, remaining 1/4 tsp of salt, and 1-2 pinches cayenne pepper (or more to taste–optional).

    Set a wok or large saute pan over high heat. When a bead of water instantly sizzles and evaporates, pour in 1 tbsp of the oil and swirl to coat. Add the red and yellow bell pepper chunks and cook for 2 minutes. Remove from the wok onto a plate. Wipe the wok or pan dry.

    Return the wok to the stove on high heat. When a bead of water instantly sizzles and evaporates, pour in the remaining 1 tbsp of oil and swirl to coat (be sure to fully coat the pan so the meat won’t stick). Add the chicken to the pan, spreading it out in one layer.

    Let the chicken fry, untouched, for 1 minute, until the bottoms are browned. Flip and fry the other side the same for 1 minute. The chicken will still be pinkish in the middle.

    Add the cooked bell peppers, pineapple chunks, and pineapple juice mixture to the pan. Let simmer for about 2 minutes until the chicken is cooked through. Remove from heat. Let the chicken rest for a few minutes till the sauce thickens. Serve over Jasmine rice.

No, I didn’t make that word up πŸ˜‰ These are basically this recipe and instead of using the soft wrap bread, I used ciabatta rolls πŸ™‚ Yes, it’s not a new one but it’s a good one! Cookies & Cream Muddy Buddies

The best thing I heard someone say about these last night was: “I can tell without even trying them; they’re good!” And they are, and completely addicting…it’s a good thing that I made them for a big group of people and not for my family of four! The recipe that I found suggested the candy melts, but I didn’t have them. Recently, I found a tip Β for melting chocolate with a little bit of coconut oil to replace those, and it worked so well I decided to use the method again. The white chocolate didn’t want to melt as smoothly as the semi-sweet kind, so I just kept adding coconut oil by the teaspoon, and melting the mixture slowly until it became the right consistency. I forgot to add more chopped Oreos to the mix, but these were still so good. Next time I will not skip that step πŸ˜‰ Thanks for reading, enjoy!

Cookies and Cream Muddy Buddies – adapted from Your Cup of Cake

“Cream”

  • 5 cups Rice Chex cereal
  • 1 cup white chocolate chips
  • 8 Oreos finely crushed
  • 1/2 cup powdered sugar
  • 1 tsp – 3 tsp coconut oil

“Cookies”

  • 5 cups Rice Chex cereal
  • 1 cup semi sweet chocolate chips
  • 8 Oreos finely crushed
  • 1/2 cup powdered sugar
  • 1 tsp coconut oil

Directions –

1. “Cream”- Measure out the rice Chex and place in a large bowl. Measure out powdered sugar and crushed Oreos and place in a container with a lid (You’ll need to shake the mixture in this later).

2. Melt white chocolate with the coconut oil, be careful not to burn it! (My microwave has a melt setting that I use) Pour melted chocolate over rice cereal and stir until coated. Transfer the coated cereal to the container with the powdered sugar and cookies. Shake until evenly coated. Dump the mixture on to a cookie sheet to cool.

3. Repeat steps 1 and 2 using the “Cookies” ingredients. Once cooled, mix the two batches together and fold in more chopped Oreos (I skipped this step – oops!)

Peanut Butter Cup Smoothie

Ok, shake! πŸ˜‰ My husband loves this “smoothie” that you can buy at Tropical Smoothie Cafe, and ever since I bought my Vitamix he’s asked me to make him one. I couldn’t find a copy cat version anywhere, but I think this one is a good substitute for the real thing. Thanks for reading, enjoy!

Peanut Butter Cup Smoothie –Β 

  • 1 banana, cut up and frozen
  • 2-3 cups chocolate frozen yogurt
  • 1 – 2 TBSP peanut butter
  • 1 cup coconut milk

Directions –

Pour the coconut milk into your blender carafe, followed by peanut butter, banana and yogurt. Blend until smooth, adding more coconut milk if necessary.

Spaghetti with Shrimp and Vodka Cream Sauce

I posted this recipe over a year ago, but I wanted to share it with you all again cause it’s just that good! I made it exactly as the recipe calls for – 1 cup of heavy cream and 1/2 cup of vodka and everything πŸ˜‰ No worries – I didn’t have two drunk minors stumbling around after they ate this. Penne and Shrimp with Vodka Cream Sauce – adapted fromΒ The Pioneer Woman

  • 3/4 poundsΒ Penne pasta (I used a pound of spaghetti)
  • 1 pound shrimp (I used 1.5 pounds, we love shrimp)
  • 2 TablespoonsΒ Butter
  • 2 Tablespoons olive oil
  • 1 whole onion (small), diced fine
  • 2 cloves garlic, minced
  • 1/2 cupΒ vodka (or white wine)
  • 1 – 8 ounce can tomato sauce
  • 1 cup heavy cream
  • salt To Taste
  • pepper To Taste
  • Parmesan cheese

Directions –

Cook the penne pasta until tender-firm, also known as al dente.

Peel, devein and rinse (under cool water) 1 pound of extra large shrimp. Heat about 1 tbsp. butter and olive oil in a skillet. Add the shrimp and cook for a couple of minutes until just opaque. Do not overcook them. Remove from heat and let cool for a few minutes. Now, put the cooked shrimp on the cutting board and pull off the tails. Chop the shrimp into bite –sized pieces and set aside.

In a large skillet heat 2 tablespoons of butter and 2 tablespoons olive oil. Add the garlic and onion and sautΓ©, stirring occasionally. After the garlic and onions have cooked a bit add your vodka or white wine. Let the vodka or wine evaporate for a few minutes, stirring occasionally. If you would rather not use alcohol, you can use low-sodium chicken broth instead (about Β½ cup).

Now add an 8-ounce can of plain tomato sauce. Stir well until combined. Then add 1 cup of heavy cream. Continue stirring. Turn heat down to low and let simmer.

Now add your chopped shrimp back into the tomato cream sauce. Give it a stir and add salt and pepper to taste. Finally add your cooked penne pasta and give it a good stir.

Shrimp Tacos with Adobo Sauce

Shrimp Tacos with Adobo Sauce – adapted from Coupon Clipping Cook

  • 10 Corn Tortillas
  • 1 1/2 pounds large raw Shrimp, Deveined and Shelled
  • Β½ teaspoon Chili Powder
  • ΒΌ teaspoon Garlic Powder
  • ΒΌ teaspoon Ground Black Pepper
  • ΒΌ teaspoon Ground Cumin
  • 3 dashes Sea Salt
  • 1 1/2 tablespoons Olive Oil
  • 3 tablespoons chopped Cilantro
  • 3 tablespoons chopped Red Onion
  • 1 cup shredded Green Cabbage
  • 1 cup shredded Purple Cabbage
  • 1 whole Lime

For the Adobo Sauce:

  • 5 teaspoons Adobo Sauce (from a can of chipotle peppers in adobo sauce; 11 ounce can)
  • ΒΌ cup Sour Cream
  • 1/2 of a whole Lime
  • 2 dashes Salt

Directions –

Chop the cilantro, and thinly slice the green and purple cabbage. Chop the onion and set the veggies and cilantro aside.

In a small bowl add the adobo sauce from the can of chipotle peppers, sour cream, lime juice, and salt. Mix and set aside.

Put the shrimp in a medium size bowl and add the chili powder, garlic powder, pepper, cumin, and salt. Mix together so that the shrimp is coated with the spices.

In a medium size skillet add the olive oil. Then add the shrimp. Turn the shrimp as they cook until each side is lightly browned (about 6 minutes). Reserve the olive oil in the pan, and remove the shrimp on to a cutting board or plate.

Cut the shrimp in half and put them in a bowl. Then add the remaining olive oil from the pan in with the pieces of shrimp and mix together.

Warm the corn tortillas in the microwave for about 10 to 12 seconds.Then top with the shrimp, onion, cilantro, and the green and purple cabbage. Drizzle the adobo sauce on top. Serve while the tortilla is still warm, and with a quarter piece of lime.

Broccoli Cheese Soup II (with Ham)

Even before I baked ham the other day, I already had plans for the leftovers! I wanted to make ham and potato soup, but he had a different craving. M loves Panera Bread broccoli cheese soup – I like it too. That’s not the problem…when I have a plan, I’m not immediately flexible toΒ accommodate different ideas! He doesn’t really like my version because it’s not as thick as Panera’s – but I have a feeling they accomplish this by adding processed cheese. After deciding to go ahead with his plan, I quickly looked for a recipe that called for the stuff, but I couldn’t find one. I was in the parking lot of the grocery store, using my slow phone and didn’t have a whole lot of time. This recipe makes a small batch of thick, rich soup – all that half and half kept the base nice and creamy. I usually double my go-to recipe and use whatever milk I have, so it’s much thinner.

Verdict: Okay…this recipe is better than the other one. It’s rich and creamy, thanks to all that half and half! Also, the addition of diced ham (from a new recipe I’ll share soon) was a tasty, meaty and a perfect complement. Everyone loved it and the rolls I paired with it. Thanks for reading, enjoy!

Panera Broccoli Cheese Soup – adapted from Cookbook-Recipes

  • 1 tablespoon butter, melted
  • Β½ medium onion, chopped
  • ΒΌ cup melted butter
  • ΒΌ cup flour
  • 2 cups half-and-half
  • 2 cups chicken stock
  • Β½ pound fresh broccoli
  • 1 cup carrots, julienned
  • salt and pepper, to taste
  • ΒΌ teaspoon nutmeg
  • 8 ounces grated sharp cheddar cheese
  • 1 heaping cup of diced ham, optional

Directions:

Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and slowly add the half-and-half (this is called making a roux). Add the chicken stock whisking all the time. Simmer for 20 minutes.

Add the broccoli, carrots and onions. Cook over low heat until the veggies are tender for 20-25 minutes. Add salt and pepper. The soup should be thickened by now. Pour in batches into blender and puree. Return to pot over low heat and add the grated cheese; stir until well blended. Stir in the nutmeg and serve.
