Pizza Sauce

Quick Post: I found this on Tasty Kitchen awhile back and it sounded, well – tasty. I like the use of maple syrup as a sweetener and red wine as a flavor booster. Red wine and tomatoes go together really well, and white wine or vodka for that matter. This was a rich sauce and so easy to prepare. I didn’t heat it up on the stove, but chose to use the microwave instead ( fewer dishes to clean later). I used about half the batch on this pizza and I’ll freeze the rest for the next pizza night. Pizza Sauce – adapted from Cooking for Seven
  • 1 – 6 ounce can tomato paste
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon plus 1 teaspoon pure maple syrup
  • 1-2 tablespoons dry red wine (optional but very good)
  • 1/4 cup water

Directions:

Place all ingredients in a small microwave safe bowl . Whisk together until well combined. Microwave for 45 seconds to heat through. Taste and adjust seasonings if necessary.

Pizza Dough

M requested a new pizza dough so this is what I decided to try. It wasn’t as good as this one, but I’m pretty partial to it. This had a nice texture and chew, it was really easy to work with; but there was nothing remarkable about the flavor. It’s just a good basic recipe, but my search for the perfect dough for him isn’t over. He really loves California Pizza Kitchen’s dough. I have to admit, it’s really good – so if I am able to find something that comes close it would be my new favorite. I doubled this recipe and ended up with four 11 ounce balls of dough, two are stashed in the freezer. I made one pizza Margarita and one barbecue chicken pizza (a la CPK, his fave – of course). The kids and I enjoyed the new (to them) pizza margarita and M happily ate four of his – pizza night is always a hit in this family 🙂 Thanks for reading, enjoy!

Pizza Dough – adapted from Food Network
  • 1 package active dry or fresh yeast
  • 1 teaspoon honey
  • 1 cup warm water, 105 to 115 degrees F
  • 3 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 tablespoon extra-virgin olive oil, plus additional for brushing
Directions:

In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.

In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).

Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).

Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.

Pizza Margarita –

  • 1 – 11 ounce ball of dough
  • 1/3 cup of pizza sauce
  • 4 ounces of fresh mozzarella
  • 10 leaves of basil
  • Parmesan cheese, Pecorino Romano cheese, olive oil for drizzling (optional)
Directions – 
*Preheat your oven to 475 about 15 minutes before you make your pizza. I use a pizza stone and place it on the lowest rack of my oven.

1. On a piece of parchment paper, shape the pizza dough into the desired diameter. I use a little olive oil to prevent sticking. Work from the inside out, and gradually move your hands away from the center of the dough. You could also do this with a rolling pin – I happen to love using my hands for the job. Once you’ve achieved the size you want, take a fork and poke the tines all over the surface of the dough.

2. Spread the pizza sauce all over, making sure to leave about an inch around the circumference. Next, take your torn mozzarella and place on top of the sauce. Because it’s fresh mozzarella, you can leave lots of empty space because this type of mozz melts beautifully and spreads itself nicely when heated. I love the stuff!  Top with basil leaves, a sprinkle of cheese and a drizzle of olive oil if desired.

3. Carefully transfer the pizza – still on its parchment paper to an upside-down sheet pan. I use it like a pizza peel to move it to the stone in the oven. Bake for about 10 minutes. Using the sheet pan again, remove the pizza from the oven and place the parchment paper and all onto a cooling rack.

BBQ Chicken & Bacon Pizza

This is M’s fave. He loves the smoked Gouda with our fave barbecue sauce and roasted chicken combo – oh, and I can’t forget the cilantro or the bacon. I baked of some thick cut bacon for this (400 degrees for 25 minutes) and it was perfectly crispy. When I need shredded chicken, I always buy chicken breast with skin and rib bones which I then roast at 350 for 30-35 minutes. I simply season them with olive oil, kosher salt and lots of fresh cracked pepper – it’s perfect and juicy every time. This time I tried fresh mozzarella (the kind packed in water) and it was nice and creamy. I recommend letting the cut pieces dry a little on some paper towel before you put it on the pizza. I was reminded why this was his favorite, it was so good; and the flavors are wonderfully complimentary to each other, It’s a party in your mouth, people! Just try it 🙂 Thanks for reading, enjoy!

    • 3 slices of crispy bacon, sliced
    • Fresh cilantro (optional)  if you have it
    • Pizza seasoning and dried oregano (optional)

My Go-To Pizza Sauce

Quick Post: This is my favorite, and more importantly – my kids’ favorite pizza sauce. I always double this so I can freeze the leftovers for future pizza nights. We like saucy pizzas, but once I portioned it out, I can probably get 8 pizzas worth of sauce, if that makes sense. It is zesty, rich and thick thanks to all that tomato paste. This is so convenient because I always have these ingredients on hand and it is so freezer friendly. I love that I can have this dough and this sauce on hand at all times in case I have no idea what to make for dinner; and who doesn’t like pizza night? I know my kids always appreciate it! Zesty Old School Style Pizza Sauce – adapted from The Cooking Photographer
  • 1 (8 ounce) can tomato sauce (without sugar)
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon ground sweet paprika
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • Fresh cracked pepper to taste
  • 2 Tablespoons olive oil
  • 1 teaspoon white vinegar

Place all the ingredients in a medium sized bowl and stir together.

Makes 1 1/2 cups of pizza sauce.

I was contemplating not having the promised pizza night because of my laziness…I needed to roast the chicken, brown the sausage, make a batch of pizza dough in order to have this dinner ready tonight. I promised the family pizza, and I kept that promise. Because the kids already knew it was coming, I decided against the lazy-butt-mom route and did all the extra work anyway. I’m glad I did, cause this pizza was so good. I made two pizzas, but this one is the mom/kid pizza – you see, normally one pizza is the “Mom/Dad” pizza and then there is the “kid” pizza – that way everyone is happy. M gets his BBQ chicken pizza with smoked gouda and the kids get their pepperoni. I thought it best to load up my half with bell pepper, tomato, mushroom and chicken while the kids’ side was sprinkled with Italian sausage…( Publix deli is so slow…I couldn’t pick up the good pepperoni ). My Favorite Pizza Dough

This is the best one I have tried so far! I didn’t have to search long for what I consider to be the best homemade dough out there. I love that it makes a huge four pound batch of dough because I portion the dough out into 16 ounce balls and freeze them to use for the next few weeks. It comes together easily, is tasty and economical – always a bonus! I have to use my giant 6 quart lidded containers to let it double in – those were a great buy. I found them at Sam’s Club in the restaurant supplies section. I have been eyeing some other items there…so tempting! I love shopping for kitchen supplies – I just wish that we had more money to blow on new toys for me…hey, those are the kind of “toys” that benefit everyone.  Our eight year anniversary is coming up, so maybe I will be able to get some things that I wouldn’t normally justify;o) Anyway, enough rambling on about that – here’s the recipe! The directions that Jamie Oliver gives are for hand kneading the dough. I use my standing mixer, so I will tell you how I make it. Thanks for reading, enjoy!

Pizza Dough Ingredients – adapted from Jamie Oliver

  • 5 cups bread flour
  • 2 cups semolina flour
  • 1 level tablespoon fine sea salt
  • 2 (1/4-ounce) packets active dried yeast
  • 1 tablespoon raw sugar
  • 4 tablespoons extra-virgin olive oil
  • 2 1/2 cups lukewarm water

Directions –

If you’re using active dry yeast, get it started proofing in about 1/2 cup of your lukewarm water, all the raw sugar and extra virgin olive oil. While waiting for the yeast to wake up, measure out all your dry ingredients – by weight for the flour is best, then combine them in a large mixer bowl.  Measure out 2 cups of lukewarm water, I always use bottled from our water cooler because of the added chlorine in tap water . Add the proofed yeast mixture and the 2 cups of water to the flour. I stir the mix with my dutch whisk, (you can use your hand or a wooden spoon) then once I have formed a rough dough, I hand knead for about a minute until it becomes a little smoother. Using your standing mixer with the dough hook, knead the dough for 5 to 7 minutes on low until the dough is smooth and springy. Place the kneaded dough in a large, lightly oiled container to rise, then lightly cover the container. Let rest until doubled in bulk – about 1 hour. Weigh and divide the dough as needed. I use Ziploc quart sized bags with a little extra virgin olive oil poured in to prevent sticking. It’s also helpful to write the date and weight of the dough on the bag.

Pizza Night


Aaaww…yeah! Everyone’s favorite night – well I know it’s ours anyway. I always make two different kinds – one that the kids can’t turn down and the other is a special one for mom and dad. I love making pizza from scratch and will be sure to post about the pizza sauce recipe I use and the pizza dough recipe, too. I keep both on hand in the freezer – it makes pizza night so quick and easy. The little investment of time and effort completely pay off when you compare homemade vs. store bought – especially in price! There’s not contest. A five pound bag of bread flour costs less than 4 dollars, and the 1.5 pound bag semolina flour costs less than 5 dollars. With those two bags, I can make about 8 pounds of pizza dough which for us equals eight large pizzas dough portions.

Pizza night was a success as usual. Even my picky-eat-like-a -bird daughter scarfed her’s down and little boy M said he wanted thirds. Thanks for reading!

  • 4 ounces of fresh mozzarella cheese, torn
  • 15 slices of pepperoni
  • Parmesan cheese
  • Pizza seasoning or dried oregano (optional)

Ingredients for the BBQ Chicken Pizza –

  • 1 – 15 ounce ball of pizza dough, homemade or store bought
  • 1/3 cup of store bought BBQ sauce, I used Sonny’s
  • 1/2 cup smoked Gouda cheese
  • 3 ounces of fresh mozzarella cheese, torn
  • 1/8 cup of shredded Parmesan cheese
  • 6 – 8 ounces shredded, cooked chicken – sauced with a few tablespoons of BBQ and ranch dressing – trust me on this one!
  • Fresh cilantro (optional)  if you have it – I didn’t but it’s a great addition
  • 2 small Roma tomatoes, seeded and diced
  • Pizza seasoning and dried oregano (optional)

Shape the dough and dock with fork as above. I placed the toppings in this order: BBQ sauce, mozzarella, 1/2 the smoked Gouda, all the chicken, the other half of the Gouda, Parmesan, then the dried seasonings, and tomatoes. Transfer the pizza to a sheet pan and then into the oven for about 10 minutes. Place on a rack to cool as before and enjoy!
